Over the weekend Lori and I were going over new recipes that we wanted to make. We created our list and began brainstorming ideas. First, we knew we wanted to make another version of our popular chocolate protein thin mints. Again, we are both thrilled to hear more and more people loving that recipe! It is definitely a go-to recipe for us when we are craving something at night.
Today I have the honor in sharing our latest recipe development. We wanted a “vanilla” version of our protein thin mints, and this is what we came up with.
This recipe is made from one of our favorite protein powders…Sunwarrior Brown rice protein powder.

We used the natural flavor in this one but you could easily use the vanilla flavored one. You could also just use any vanilla flavored protein powder of your liking in this recipe. Lori and I also used a little bit of hemp protein and lucuma for more flavor and ‘body’ for this recipe. As we were not sure how just using brown rice protein powder would turn out (mmm maybe we should still try that out to see).
If you do not have lucuma you could use cocoa to make it chocolate flavor or more hemp protein even. Or maybe even a combo of different things like maca, mesquite, carob, cocoa, and lucuma. We tend to always have lucuma on the shelf as that is one of our favorite things to add to recipes. We seriously love the flavor.
Now when coming up for a name for these cookies we obviously could not call them thin mints, as there is no mint in them. We had to think about a good name. I wanted to call them cookies, but Lori did not. She kept saying rounds. They are rounds not cookies. So I lost the battle in naming this recipe.

pure2raw recipe: brown rice protein rounds
inspired by our chocolate protein thin mints recipe
makes about 8 rounds – depends on how big or small you scoop them
time to make: about 5 minutes to make and then about 20-30 minuets to set in fridge
Ingredients:
- 1/4 cup hemp protein powder
- 1/2 cup brown rice protein powder
- 1/4 cup lucuma
- 2 teaspoons vanilla
- 1/2 teaspoons stevia, liquid
- 8 tablespoons coconut oil, liquid
- 1 1/2 teaspoons cinnamon
Directions:
Place all ingredients into a bowl and stir together. Slowly add in your coconut oil.
Once batter comes together, note it will be thick. If you want it to be less thick then add in one more 1 tablespoon of oil for a thinner protein round.
Scoop your protein rounds onto a plate or tray. Then set in fridge to set. You want the cookies to be hard to the touch. Keep refrigerator or store in freezer.
**What if you do not want to use stevia, then we suggest using a liquid sweetener and reducing the amount of oil you use. Start slow and slowly add in more if needed.

Another great recipe, I loved the thin mints. The hemp wasn’t agreeing with my stomach though so I might try these with the natural whey I have on hand to see how they come out!

Yum, these look great! I still have to try out the thin mint recipe. For some reason, it seems weird to me to eat mint flavoured things when its hot out though haha. I usually buy coach purses, I love those bags. They last foreverrr and they are so classic. So they are usually worth the more expensive prices.
I don’t have a good place to buy purses…but I need one! Lol. So I hope you post the recommendations you get

These look great..but can you tell me about lucuma? I have never worked with it…what can I sub for it if I can’t find it in the bulk bin to try?? You girls never steer me wrong with these recipes so I definitely want to try!
For some reason I thought you girls felt the same way about Sun Warrior as I do (blech) LOL…I can only take it if I mix it with carob or cacao. I can do hemp though…maybe I will be pleasantly surprised with the end result with a mix of brown rice and hemp!

As for purses, I just bought one from Marshalls (TJMaxx-like store) and love it! Definitely recommend “Baggalini” for you two! The purses have enough pockets, are classy, and are perfect for busy women like you

What would be a good substitute? Also, will virgin coconut oil work as well (currently using this http://products.mercola.com/coconut-oil/)?

Tam you can just omit the lucuma and reduce the coconut oil. Just do one tablespoon of coconut oil at a time till it comes together.
