vegan protein powder muffin recipe

hello friends!!

we finally did it! and got this post up just in time for you to make it for lunch if you want to.

well we think we finally made our VEGAN version of our delicious cocoa protein muffin from a few weeks ago. ever since that recipe we have been trying to make a vegan version of it.

we have had numerous failures at this vegan version.

but we did not give up. we knew somehow we would make it! and we are sure glad we stuck with it.

protein muffins that are vegan

as today, we are finally ready to share our recipe for our protein powder muffin vegan recipe.

now we used a vanilla based flavored brown rice protein powder. check out our favorite protein powders here and other ways we enjoy protein powder.

please use any flavor protein powder of your liking. though just remember that whatever protein powder you use…this muffin will taste like. so make sure you are using a protein powder that you love!

vegan brown rice protein muffin recipe

during our few attempts we have learned a lot about making this recipe vegan and using protein powder as our FLOUR instead of nuts like our typically mini cakes are made from. the whole point to us creating this recipe (and we are sure many others out there have done this with a similar goal in mind) is that we wanted to use PROTEIN POWDER as our flour in the recipe. so in doing this using eggs made it very easy. making it vegan was another story! it needed some practice to get it just right.

we had to play around with the ratio of flax meal to protein powder. and the ratio of baking soda and baking powder. we came to the conclusion that it comes out best with equal amount of flax to protein powder. and the leavening agents are still up in the air. feel free to play around with them and see what ratio you like best. we found that we need more leavening in this cake to help make it rise a little since there are no eggs.

this vegan protein powder muffin came out dense and slightly chewy from the flax meal in it. we kept ours low in sugar by using stevia as our sweetener. so we did not find this protein muffin to be very sweet. but that is ok with us as we did not want it to be overly sweet. but like with all of our recipes please add in more SWEETNESS if you desire sweeter things! you have to make sure you like it in order to eat this muffin and truly enjoy it.

we also topped our vegan protein muffin with 1 teaspoon coconut oil.

mmmm sooooo good. we love putting coconut oil on top of things, just provides that little bit of healthy fat and moistness you need.

 

enjoy these vegan protein powder muffins with some coconut oil or fat of choice, even a nut butter or jam would be nice on top!

there you have it friends. give it a try and let us know what you think. again you can add in any flavorings of your choice to jazz this basic recipe with!

we ate this muffin this morning and thought it came out great! we were so excited to finally figure out this recipe. now we just have to play around with different flavor variations of this recipe and our cocoa one. oh what will we think of next!

would like to try, but i am bit confused about what type of pan i am using to make 1 large muffin.

yes you can use one large muffin pan, we used a ramekin to bake ours in.

I’m interested in trying this recipe, but would like to add a few blueberries. You guys have way more experience than I – do you think adding a small amount of fruit would require any adjustments to the ingredient ratios?

No I do not think adding in a little bit of blueberries would be fine. I would toss them in at the end and stir till mixed.

Yay!! I attempted to make your other chocolate protein muffin vegan with flax eggs and it turned out okay, just wasn’t quite cooked all the way through but I was impatient! So happy you guys had success, I will be making this soon!

Sounds really good–I guess it needs a lot of baking powder/soda for a single muffin.
I’m curious–have you tried ener-G egg replacer in this? Or do you ladies avoid corn (I think it may have some corn in it?) Wondering whether that would help with the binding/leavening.

I love the idea of a muffin using protein powder for the flour.

Hi ladies,
do you think i could sub chia seeds for the flax seeds? I heard they are pretty interchangeable. Thanks so much for making a vegan version; i also just found out i’m allergic to eggs (including duck ones) so I’m greatful :)

my husband is allergic to flax so I was thinking if I made this I’d do one with flax and one with chia. i’ll post the results if I can get to it tomorrow.

wow this is perfect for me! and only makes just one, I love it! i will try to do this for breakfast. no sugar either, just stevia, can’t get any better (well health wise). I wonder how a few blueberries would bake in it. i don’t have a ramekin so I may have to do a few small silicone muffins. I’ll let you know how that works.

Thanks for the recipe! I don’t have baking soda so I ended up using 1 egg white, and also added blueberries. I LOVE how it turned out. New breakfast obsession and can’t believe it’s virtually carb free!

Hi Im from Montreal, Canada and I decided to um “remix” your protein muffin recipes to my boyfriend and I’s canadian taste :)
So i baked the flax seed muffin and the cocoa one today using SunWarrior protein blend …turns out i wasnt so sure of the texture of the cocoa muffin, but preferred the taste while i preferred the texture of the flax one, the taste being satisfying.
Anyway just to say that i tried a mix of the two; made the flax with an egg&egg white without baking soda and powder…with turned out great!

Thankyou for your innovation… recipes are far too complicated these days and the ones you come up with are just what a student needs to stay healthy and energetic :)

Nicole would try to eat them fresh or within 2 days. Can freeze for longer shelf life
