new ideas, new things to come

by Lori and Michelle on June 12, 2012

Hello luvs!

We got a lot of news to cover so we better get to it.

First, we are so happy everyone loved our curly sweet potato fries veggie wrap!! Let us know if you make it.

Okay, now onto the news. You have seen us mention many times over our varies social media outlets about us working hard and making changes over at our bakery.

We have shared some of our story about Twin Cakes here, and started to show more about our new adventure of getting our own place. Ever since then we have been working hard on growing, getting new wholesale accounts, and have been working hard to keep up with making our products.   But as we keep working late hours, we are realizing somethings and have had to make some very hard decisions.

Yes, one thing that is great about owning your own business – is that you get to make the decisions, but it is also the hardest thing. As it is all on you. The future of your business rest in your hands. kind of scary

Both of us want to keep our bakery, but realizing it is hard to keep afloat in this economy. We cannot compete with some of the big food companies on prices. But we try. We search and search looking for the best ingredients at a low rate, so we can charge a low rate. And unless you are in the food business, you may not understand what all goes on behind the scenes. There are so many little things that keep a company running, and there is just two of us!

Yep that is right. We do everything…from making the food, cleaning the dishes, cleaning the facility, organizing paperwork, shipping orders, customer service, website maintenance, accounting, taxes, marketing, social media, packaging, labeling, ordering ingredients, unloading ingredients,  and so much more.

People have asked us what it is like to own a bakery, well bottom line is – it is A LOT OF WORK.

But it is worth it!! We love playing around in the kitchen. We love hearing from our customers!

As we are learning more about the wholesale side of business (mass production), we are realizing we are not setup for it. We have started looking into a food manufacturer; have someone else make our recipes so we can work on other business things.  Not sure where things will go, as it is all new to us.

In order for us to stay in business, we have had to re-evaluate our business model. We hope we are making the right decisions. Trusting God has a plan for us. As you can see we have dramatically cut back on our product line, and have been working hard on “changing” our recipes to make them easier to make, with a faster turn around.  As before majority of our products took 3-4 days from start to finish before we could ship them out, which in the long run meant we would get backed up in getting orders out quickly. Not the best for long term success. Changes needed to be made.

Here we are making our very popular biscotti, which has turned to be our main product to focus on getting into stores everywhere.

But our biscotti takes too long to make from beginning to end. We are trying new ways to make them so they are easy to make and faster.

We make a lot of biscotti on a daily basis. These ones are just about ready, just need to be labeled.

We are also in the process of re-doing our packaging which we will share more on that soon. So for those of you that are thinking of getting into the food business one thing you need to think about: do you want your products in stores or just be a local food business in your area?  We have done both. We started off as a local bakery but then realized we want our products everywhere. Knowing which direction you want for your company will make a difference in how you structure your business. Just something to think about.

And there is one more big announcement we have.

We are going to be changing our blog name.

to be continued.

till next time,

xoxo

Lori and Michelle

honestly, i can not imagine how much time it takes you guys to do all of the work related to the bakery. i don’t even know how you have time to blog! excited for the new blog name!! :) i looked very briefly into opening a juice shop but all the legal issues and paperwork for safety/food handling turned me away. it’s quite complex as i’m sure you know!

Ladies, I love you both and support you so much in your ventures! It actually makes me sad and frustrated that small businesses like yours have to work so hard to compete with big business prices. On the consumer end, it’s so hard to want to support local businesses but not be able to afford it. And on your end, I know it’s just as hard to want to be able to share what you can do with as many people as possible but have to fight against the big companies who can produce cheaper food. I have every faith that you will find a balance that works for you, and if there’s ever anything I can do in any small way to support you, let me know. :)

You should both be so proud for following your dreams and just going for it! So many people have ideas and dreams they are too scared to pursue. Everything always works out with a positive attitude – I’m sure your bakery will be a huge success :-)

Exciting changes but yes, owning your own business is super stressful – I have my own company too and I know how stressful it is (and mine is only online which allows for less stress because of no overheads). Your biscotti look amazing and I know how hard it must be when you’re striving for quality but also want to churn out quantity. You guys will find a way, I have faith in you!

Excited to hear about the new blog name too!

And now I’m craving your biscotti. :) I had regular biscotti the other day and was so disappointed! Yours is the best!

We are going through the same thing right now. Owning our business is great, but there are times when you get scared because things are really moving in the right direction. Then you spread yourself too thin trying to make more happen. Then you have to re-evaluate where you are heading and regroup. Sounds like you two are getting there and heading in the right direction! I trust you will find your path and you know I wish you all the best on all of your adventures!

As a business owner myself I know exactly how you girls feel. Having everything on your shoulders is very overwelming and very exciting at the same time. I run blog (above), a membership website (theartofweightlifting.com) and I have an 8-location boot camp that I run in Charleston, SC.

But at the end of the day I wouldn’t change it up for the world It’s the most rewarding feeling! You guys have that passion too which is why i love reading the blog each day.

Good luck with the change, I am changing my site name too!

I so appreciate your honesty and understand where you are coming from! I started a bar business http://www.vixibar.com about 4 years ago and had dreams of going BIG! I have kept it hand made and home made and like you have been trying to find a way to make the whole process more efficient! People do not understand what all goes into a food company and the expenses that occur long before it even hits store shelves! You have a wonderful product line, smart to choose only a few items to grow with for now! The journey will come clear and I wish you the best of luck!!
