Hello Luvs,
Glad to see that everyone liked our amaranth soup. It kinda just happened unexpectedly, but those are when the best recipes turn out right?
But as we promised here is our easy raw and gluten free carrot cake recipe
Pure2Raw Recipe: Carrot Cake Recipe using carrot pulp

This recipe took us two times to perfect. And we are still creating new versions of this so that it can be done for those who do not have a dehydrator. Though technically you do not have too even with this recipe. We just like the texture the dehydrator provides the cake!
Ingredients:
- 1/2 cup carrot pulp (ours was a mixture of about 3 carrots and one apple)
- 1 1/2 cups coconut flakes
- 1/4 cup +1 tbsp date paste ( can use agave or maple syrup if you do have dates)
- 1/4 cup raisins
- 2 tsp coconut sugar or maple sugar (not raw but adds great flavor and texture)
- 1 tbsp mesquite (optional)
- 2 tbsp vanilla
- 2 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- coconut oil
Frosting: we used coconut butter whipped with some stevia, vanilla, and a little agave. But you can use any frosting you prefer! Also we did not add nuts but you could always throw in some chopped walnuts.
Directions:
Take your carrot pulp and remaining ingredients into place into food processor and pulse a few times to get all ingredients well combined! You may use your hands to combine ingredients if you do not have a food processor
And form cake dough into muffin liners or cake pan. We did ours individual ramekins (made 3). And dehydrate for a few hours, maybe 4-5 hours.

Remove from pan/liners and let dehydrate for another 4 hours or so. You want the cake to feel dry but not over dry, have a little bit of moistness to it
Once it comes out just top with frosting and devour. Nothing beats eating a carrot cake that is truly full of fiber, healthy fats, and lots of flavor and texture
We are hooked!

We were a little nervous about this recipe because the first one we made we put way to much carrot pulp in and not enough other flavors because all we tasted was carrots! Don’t get me wrong we love carrots though it was a bit too much
Another great thing about this recipe is that it is pretty easy to make but it is always RAW (semi raw), gluten free, vegan, soy free, casein free and nut free!!!
The frosting does complete the whole cake! Who doesn’t love some good coconut butter as frosting!!!!!

I think Katie would agree that anything with carrots and coconut butter is delicious. She has made some delicious carrot creations like her carrot cake macaroons and her carrot cake muffins! And this lovely lady made some raw carrot cake with chia seeds! And these two amazing ladies made some carrot cake smoothies here and here!

Hello friends,
Hope everyone is having a wonderful day
It was a glorious day here in NC… sunny and 70 degrees!!! I hope that means Spring is right around the corner
Got some request to share what we did for the banana pancakes. Remember this recipe we just threw together and it is real basic and few ingredients.
So here we go!

Pure2Raw Recipe: Easy Banana Pancakes
Ingredients:
- 1 banana, mashed
- 2 tbsp flax meal
- 1 tbsp vanilla
- 1 tbsp lucuma (or maca)
- 2 tbsp coconut kefir (or any yogurt or milk of your preference)
Directions:
In a large bowl place all ingredients and stir till combined.

Scoop out onto dehydrator sheet


Dehydrate for about 8 hours than flip and dehydrate for another 8 hours or till reached desired texture, soft or crispy.
*Note: if you do not have a dehydrator you may sauté on a skillet like you would a normal pancake.

And you have a very easy and rich banana pancake that is raw, gluten free, and vegan and contains no sugar besides the banana!

It does not get much easier than than folks! Creating a raw pancake is something Michelle and I have been trying to do for some time now, these is not quite final but they are delicious banana flavored and moist pancake that sure to hit your sweet spot

Hey everyone
How was everyone’s weekend?? We had a long one over here, but worth it ; ) Did anyone watch the Oscars?? We took the night off from work and enjoyed some wine and good entertainment. We just enjoy the awards shows…all the pretty dresses.
We enjoyed some good eats over the weekend…featuring some new recipes (which we will share ; ) )
Enjoyed a very large breakfast Saturday morning before we headed to the farmers market.
Buckwheat apple porridge. We have not had this in sooo long, it used to be our breakfast every Saturday morning last year before our Saturday markets. It is so simple and very filling, which is what we need for our long market days.

Our dinner was a lovely simple salad

Sunday morning we finally made some raw pancakes in honor of Heather’s Pancake Sundays.
These were not our best ones, it is pretty much just mashed up bananas. But we will share the recipe if you all want.
Yesterday we did our longest run yet since the marathon in January. Honestly we really have only ran 3 other times since the race, we just have not been wanting to run. We have been enjoying other forms of exercise.
Our goal was a 30 minute run, but it turned into a 9o minute run. We went up to the local park and got on a trail and did not know how long it was….but that is okay it was 60 degrees out and sunny!! We will take it!!
Pre-workout snack:

We have been testing out new workout snacks for our cookbook, yep having a whole chapter dedicated to what we eat for fuel and recovery ; )
And then dinner and dessert were both new recipes!!
Dinner:

Fermented Kelp Noodles
With a side of kraut sprinkled with dulse
Perfect Sunday dinner!! We think kelp noodles will become a regular Sunday dinner ; )
And dessert took 2 trials. We have been wanting to make raw carrot cake since forever!! There are tons of recipes out there, so we of course wanted to create our own. We wanted to make it out of carrot pulp, so the first attempt failed….ended up in the trash compost. Second was beyond perfect….way better than we were planning, it honestly tasted like real carrot cake!!!!
Can you tell the difference?

Not only was it raw but free of gluten, eggs, dairy, peanuts, corn, soy, and NUTS!!!
We had seconds…it was that good. I think I could eat this every night. It was beyond words!! I know you all are thinking, do we plan to share the recipe….YES!!! We will expose this tasty easy to make dessert sometime this week ; )
Not a bad way to end the weekend.

We bought this the other day at the store because our older sister loves it, so we had to try for ourself.
Verdict?
Different. It was very sweet compared to other coconut water, even though it claims to be unsweetened.
Maybe it is their types of coconuts? Or maybe it was due to being chilled and out of can? Who knows but it was bothering me that it was so sweet, a mental thing I guess. But we drank it all. Not sure if I would purchase it again. Just maybe when I need something cold to drink. Lori did not mind it too much, enjoyed having something different.

Hello Friends,
Hope everyone had a wonderful weekend
We did though it was a busy one. Michelle and I were in the kitchen a lot prepping food and creating a bunch of new recipes!!!
We took Saturday off from working out, which it is always nice to take a day off. Although on Sunday we did about 30 minutes of a mix of things for a workout like yoga, jump rope, stairs, and some calisthenics plus a 20 minute run outside. It felt nice to get outside for an easy run
Looking forward to Spring for sure! We both just felt like doing a bunch of different thing yesterday instead of the same old thing. It was great to mix things up! Keeps the body guessing.

And of course we ate well over the weekend. Here are just a few highlights!
We had some carrot coconut wrapper left so we decided to create sauerkraut arugula wrap out of it stuffed with some pumpkin seeds
Heavenly!!! YUM YUM!!!


Easy, simple and sooo satisfying. Loving the carrot coconut wrapper!
And to go along with this lovely wrap was more sauerkraut and arugula (fresh from the local farmers market)

And as I mentioned before about what we had in store for our dessert!!! Well we got the inspiration from the lovely Jessica who is so creative with her desserts. Once we saw this cookie pie we just knew we had to make it with our twist on it

And this cookie pie is also nut free and only sweetened with stevia!


AMAZING! There are no words to describe this mouth watering dessert. Not only did it taste great and like cookie dough but knowing that there were no nuts and no sugar was even better

And dinner last night was a glorious salad
Watercress, spinach, nutritional yeast, fermented veggies, turmeric, apple cider vinegar, sea salt, and topped with quinoa and cinnamon and coriander seeds.
Once again heavenly! Not a bad way to end the weekend eh?
We are also making our own compost and growing some cabbage… more on that tomorrow! Fun stuff over here

Hey luvs
Hope your Monday is going well. We have had a not so typical Monday morning here. Had to run some errands, deliver an order, and then received an unexpected order. We have been out of the house all morning, but did manage to make a small juice before heading out the door.

This juice was some beet tops, carrots, fennel, and ginger. We are giving juicing a try again. We are seeing how our bodies like juicing time around now that we are feeling stronger. Hopefully we will not get too many detox symptoms.
So glad to see everyone enjoyed our overnight buckwheat groats!! Simple, yummy gluten free breakfast!
How was everyone’s Valentines? We had a nice surprise yesterday.
Red Roses?? But from whom? And for who?
Not for me ; ( But Lori. Her wonderful boyfriend surprised her with roses. She had no idea, I had no idea. We actually first thought is was from our parents, but then as we opened the box, we both saw Love Gary. Her boyfriend is currently studying abroad in Paris, so this was a very nice surprise for Lori.
We enjoyed some good eats yesterday as well. Began our Sunday morning with a perfect cup of hot cocoa, then followed by a green smoothie.
Had a great workout. We have been doing Tracy Anderson’s Mat workout and love it!! We love her (more on that later). And we treated ourselves to Vega shake afterwards. It was perfect!! We have not had Vega in so long. I know there are some that do not like the taste of Vega, but I love it. I made it thick like pudding, yummy…

Vega Health Optimzer with a little bit of water...makes perfect pudding in my opinion.
And then dinner was inspired from Everyday Raw. One of Matthew Kenney’s cookbooks that we just love. Also I learned to make this while at 105 Degrees

Not only is the pizza raw and gluten-free, but also we made it nut-free!!! So it was very light. We made a few changes to his recipe, and it came out great.

Coat arugula with sauce and then we placed it the dehydrate to “warm” up. YUM!

We did not have anything chocolate, GASP, I know I know it was Valentines Day, but actually for me it was just another day.
We decided to take a spin on one of our old classic recipes, Key Lime Tart.

Happy Valentine’s Day Luvs!!!
Again congrats to the winner of our giveaway!
Lori and I were up to 2am last night…I know were are crazy party animals, haha.
My best friend was in town for the night and we had a lot catching up to do I guess!

We made some overnight oats in honor of Brittany because we know she loves them. But our idea got even more inspiration from our friend Stephanie….the key ingredient KEFIR.
You all know Lori and I are big fans of our homemade coconut kefir, we have it almost everyday. Well here is our RAW version of these two ladies recipes.
Pure2raw: Raw Overnight Buckwheat Groats

Serves 1
- 1/3 cup buckwheat groats (soaked overnight, then rinsed in the morning)
- 1/3 cup coconut kefir
- 1/4 tsp cinnamon
- 1/2 lemon zest
- 1/2 tbsp tbsp maca
- a few drops of liquid stevia
It was amazing!! Brittany and Stephanie we thank you because we think we found our new weekend morning breakfast!!!

We use to eat soaked buckwheat groats all the time last year. But did take a break from them, boy have we missed them! Why did we take a break? We were trying to simplify our diets as we heal, so we took most nuts and seeds out of our diet as of late. We have been playing around with different foods, rotating things back in and seeing how we do.

We are loving the favorite romantic movies comments happening on our Valentine’s day giveaway!!!
Oh all the love is in the air
Going back to our tasty and easy Superbowl recipes that many of you requested to see I will share some here and the others will be posted under our recipes tab.
First recipe is our Kabocha Lime Guacamole

This recipe is super easy and taste amazing!!! A fan favorite for all
And who doesn’t love some guacamole?
© 2010 Pure2Raw Recipe: Kabocha Lime Guacamole
Ingredients:
- 2 avocadoes
- 1/4 cup puree roasted kabocha squash
- 2 garlic’s
- 1/4 tsp salt
- handful of fresh cilantro
- 1 scallion
- 1 lime zest and juice
Directions:
Place all ingredients into a large bowl and mash up using a fork!

We like to have our guacamole a little on the thick and chunky side. Though we can mash it up as pureed or chunky as you like

Leaves such a fun color don’t you think? And taste unbelievable!
That’s it for that recipe, so simple you just need a bowl and a good fork
Next recipe is our Cheezy pepper nacho sauce
Again a very simple recipe with a little twist in it! We added some of our roasted kabocha squash to it as well
And let me tell you this brought the sauce to a whole new level, a little bit of sweetness for the squash! YUM!

© 2010 Pure2Raw Recipe: Cheezy pepper nacho sauce
Ingredients:
- 1 red pepper
- 3/4 cup nutritional yeast (we love this stuff)
- pinch sea salt
- handful of fresh parsley
- 2 garlic’s
- 1/2 zucchini
- splash of water
- 1 tbsp tahini
- 1/2 tsp turmeric
- 1 tbsp sunflower lecithin *you may use guar gum or xanthan gum (about 1/4 to 1/2 tsp)
- 2 tbsp kabocha squash puree *if you do not have any veggie puree made you can just add a dash of sweetness from agave nectar
Directions:
Place all ingredients into food processor or blender and blend till creamy and well combined. Ours we a little on the runny side

And enjoy over some crackers or chips (or pictured here our pure2raw rosemary crackers)
I will add our club sandwich later today to our recipes tab!

I hope you get to make some of these easy and delicious snacks

They really helped and brought a smile to our faces! So thank you!!!
As it is a nasty,cold and wet day here in NC we thought about trying to bring some joy and happiness to our blog today to help get everyone’s mind off the weather
Today we are going to share how we made our coconut rice stacked dish! This is a re-creation of Michelle’s final dish at school!
Seriously has become one of my favorite meals! It is easy to make, pretty to look at, and leaves your taste buds satisfied.

Pure2Raw Recipe: Coconut rice stacked avocado dish
Ingredients:
- 1-2 avocados
- 1 small red onion
- 1-2 tbsp olive oil
- pinch sea salt
- couple pinches of your favorite jerk seasoning (we created one by using cinnamon, cloves, thyme, nutmeg, & cayenne)
- 1 small head of cauliflower or half of a large one
- 1 cup coconut flakes
- 2 garlic cloves
- 1/4 tsp curry powder (mainly for color)
- 3/4 cup softened coconut butter (not the oil, though if you need use the oil I will up the coconut flakes)
Directions:
Take your red onion and slice it up into thin strips. Place on dehydrator sheet and coat with olive oil, pinch salt, & your jerk seasonings. Let dehydrate for at least 5 hours. *Or you may lightly sauté the onions and spices on a skillet. You want the onions to be lightly caramelized.
Next, take your head of cauliflower and lightly chopped it up (this helps when you put it into the food processor to keep them all similar in size)

Place chopped cauliflower into your food processor. *we used our small food processor so it took us two times to get all the cauliflower chopped finely

Pulse till finely chopped

Next add in your coconut flakes

Place into food professor with spices, garlic, and pinch salt. *we added in some lemongrass to ours
love it!
Pulse till finely chopped again

Combine finely chopped coconut flakes with your finely chopped cauliflower and add in the 1/4 tsp curry or turmeric

Next add in coconut butter and stir till well combined!
Our all time favorite brand of coconut products Artisana!


That’s it. Time to put the whole thing together! 
Slice up your avocado, grab your onions, and bowl of coconut rice.
Time to build layers. We used a large circle cookie cutter to build our layers in. You can use anything you can find that is deep to build up the layers in but easy to remove.
What we did: first put a layer down of the coconut rice, next top with top slices of avocado, than top with red onions. Than repeat that same thing one more time. And it is done!
*note- there will be leftover coconut rice which you can save to make more stacks with or create another delicious meal out of it. Or you may eat plain
Lots of options to play around with!


Seriously much better than rice out of a box in my opinion! And a lot quicker to make

Great way to ‘add’ more veggies into your diet and kids diets too!

Love how the red onions bring so much color and height to this dish
We love this dish: easy, full of nutrients, full of the healthy fats, raw, vegan, gluten-free, and nut-free!

We got a text from our older sis this morning and we found out she is having a BABY GIRL!!!! Another girl added to our family ; ) Sorry dad! Yep, Lori and I have 2 older sisters, plus our mom, so five girls! YIKES!! Now another little one is being added : ) We are so happy for our sister and her husband.
And we have briefly talked about her diet on here, and she is not 100% raw nor 100% vegan, although she most of the time her food choices are vegan. For those of you who have asked as about being pregnant and raw/vegan please check out the amazing Kristen who is a great example and is going through the great journey of motherhood. Plus there are many other great raw moms out there….Debbie, Lori, and check out this great list of super moms ; )

Another week has come and gone.
And today they are predicting snow and ice here! Oh boy. Pull out the wine blankets!
Stephanie and Brittany watch out girls and please be safe (and to anyone else who is going to be hit with snow this weekend)
Today I wanted to share with you all the every so lovely veggie mash that I enjoyed the other day

Celery Root Squash Mash
Yep you heard me right! Not your average mash is it? We have done this one before lots of times but different versions of it. This one has a few little twist in it
I know mash potatoes are a classic for many people but promise this one is a good replacement!
And the best part not many ingredients and very easy to make!
Pure2Raw Recipe: Celery Root Squash Mash
Ingredients:
- 1 small celery root, chopped (about 1 cup)
- 1 small butternut squash, chopped (about 2 cups)
- few fresh sage leaves
- 2-3 tbsp coconut oil, liquid
- about 1 inch lemongrass
- 2 garlic cloves
- 1/2 cup water
Directions:
Pre-heat oven to 350 degrees.
Peel and chop both celery root and butternut squash. Place on aluminum foil on baking sheet.
Pour your coconut oil over your veggies and place sage leaves on top.


Place veggies into oven and let roast for about 40-45 minutes or till just tender. (you want to be able to put a fork through them with ease)

Once done, let veggies cool and transfer to blender or use a hand held blender and puree till smooth.
Add in the special ingredient: lemongrass

I cut it up with scissors before pureeing it up, it helps make sure it gets well blended!
Add in 1/2 cup water, 2 garlics to blender along with roasted vegetables.

It is that easy!

Well in my opinion! It would go great with just about any companion! It is looks cheezy too from the squash, double bonus because much healthier! Because there is not cheese in there! YAY! Also great for people watching their nightshade vegetables -there is no potatoes!
