Gluten Free Vegan Pumpkin Pie

Hello friends,

Well we were up for the majority of the night finalizing orders and packing. Checking our list twice!

We knew we would be crammed for time today to do a post so we planned ahead and already wrote this post yesterday. Gosh, we are so smart… I am sure we are the first people to come up with that ;)

For today’s last day of theme week: holiday meals. We decided to share our very special gluten free vegan agave sweetened cooked pumpkin pie. We hope you all enjoy it. I know we have already done a pumpkin pie last week following Averie’s but since pumpkin pie is such a classic this time of year we wanted to share our cooked version as well.

Twin Cakes Bakery Recipe: Gluten Free Vegan Agave Sweetened Pumpkin Pie

Ingredients:

  • Your favorite pie crust
  • 14 oz pureed pumpkin ( I think that is about one can of Libby’s)
  • ¼ cup hemp milk (or any milk substitute your prefer)
  • 1/3 cup agave nectar
  • 1 tsp vanilla extract
  • 1 1/2 tsp pumpkin pie spice mix
  • 2 heaping tbsp arrowroot ** this is your egg replacer (you can use any starch you have like potato starch, tapioca, or cornstarch – we prefer arrowroot we feel it does the best)

Directions:

Make your pie crust and press into your pie shells.

Than in a large bowl place all your ingredients into it.

Add in your spices

Add in the “egg” re-placer the arrowroot starch and stir some more

Stir till everything is incorporated

Time to fill the pie shells

Into the oven the go (we did ours as individual pies)
Bake in a 375 degree oven for 15 minutes than reduce oven temperature to 325 for about 20-25 minutes for mini, for a whole pie go about 40-50 minutes. Or until set. You want the edges to be set and a very slight jiggly in the center.

And that is it. Let the pie cool and set in refrigerator till ready to eat it. May top with some whip cream or any topping you may wish :)

Well time to hit the road and head to Valdosta, GA to see Gina and Tom~We got our car packed and ready to go!!! :)

Last of raw sauerkraut though raw stuffing made up for it

Happy Friday Friends,

Thanks for all the lovely comments about us being vegans! We are glad you all enjoyed the food pictures we sure enjoyed eating them!

As many of you know we are leaving this Saturday after our farmers market to head home to Florida! Though we are stopping to see the beautiful Gina for the night than finishing our drive on Sunday to Orlando, FL to stay with the older sis for a few days before we all leave to head home (Ft. Myers) for the holidays!

I must say Michelle and I have been non-stop all week from cleaning, to birthday orders, to holiday orders, to farmers markets, to blogging and creating fun recipes, and PACKING! Still have some packing to do.

We are sure looking forward to some down time.

Our workouts for the past few days have been a little different. We mentioned earlier this week that we were doing shorter runs this week instead of one long run. We managed to do some yoga on Wednesday, ran another 6 miles, core exercises and push-ups on Thursday, and today we walked for 40 minutes and did 30 minutes of yoga! Not bad for such a busy week with little sleep! Must be from all those cocktails kombucha’s and green smoothies that keep us going ;)

Overall we are both physically feeling strong and good. During our runs we have been pushing ourselves to run a little faster. Mentally I am still struggling a little though today feeling alright… it must be due to it being a beautiful day outside. I am not giving up though… I know I will figure out my hormones and get back to being balanced soon ;) And a big thanks to all you wonderful and amazing friends for all the supportive comments and emails! Your kind words are really helping me get through this! Xoxo

Our food for the past 2 days has been a little off too. ;/ Hey it happens, even to us!

We still have been enjoying about 2 green smoothies a day, finished off our raw sauerkraut : (

Here is our raw sauerkraut with some cucumber slices and simple dressing that we used for our creamy spinach topped with some black sesame seeds…and we ended up adding nutritional yeast on top!

(Though made some raw yogurt) Also been enjoying salads, puddings, and some sweet treats courtesy of Twin Cakes ;)    Yes we treated ourselves to some of our gluten free vegan low glycemic, soy free and corn free cupcakes!

We have a few more things to finish up here for the market and order for tomorrow. And the last bit of cleaning and packing. Than hopefully for some shut eye ;)

Theme Week – Holiday Meals

Today’s holiday meal is something I have always loved…. Ok the whole house always loved….. STUFFING! Now who doesn’t love a good plate of stuffing ;)

Every since I have been eating gluten free vegan I have learned to be creative with my stuffing’s. In the past we would make our own gluten free vegan bread, but now that I do not eat bread I had to find a replacement.  We thought about putting buckwheat in but then decided not to, but it would be a great addition.

Pure2Raw Recipe: Gluten Free Raw Vegan Stuffing

Ingredients:

  • 1 apple
  • 1/3 cup fresh cranberries, chopped
  • 1 cup sunflower seeds, soaked
  • ½ cup celery, chopped (about 2 sticks)
  • ½ white onion
  • 1/3 cup pumpkin puree ** we added that at the last minute – turned out great!
  • 1 cup tea (any tea of your choice)
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp sage

Directions:

Gather your ingredients

Next pour tea into a large bowl and add start adding other ingredients to the bowl as well

  Basically we let the ingredients soaked in the tea for about 15 –30minutes. We use that us our broth… and it helps marinate the ingredients to give more flavor!

Drain ingredients

Place ingredients into a food processor

Pulse a few times to get a little chunky

      Add in the pumpkin puree** Stir all together!

Easy raw pecan butter sauce

Theme Week – Holiday Meal

Good morning friends,

Well in continuing with our holiday theme weeks today’s recipes is a twist a classic yet simple Brussel sprout dish.

It took awhile for us to really like Brussel sprouts. We always felt bad because our grandmother would make hers every year for the holidays and we would never eat it. But as we got older and our taste buds changed we really loved them. Though, ever since going raw we really have not had them so we thought lets try making something with them but do it raw. So here is what we created. We hope you like

Pure2Raw Recipe: Shredded Brussel Sprout Hash with Pecan Butter Sauce

Ingredients:

  • 1 bag of Brussel sprouts
  • 1 Kabohca squash ( you can use any squash of your choice)
  • pinch salt
  • 1-2 tbsp coconut oil
  • 1 tbsp apple cider vinegar

Directions:

Clean and trim your brussels sprouts.

Take your Kabocha squash (our friend Heather’s favorite squash) and skin and gut out

Take your squash and brussel sprouts and throw them into a food processor to shred. Though you could always manual cut each brussel sprout into small thin slices!

Here is what you get:

And repeat this step with your squash… again you can always cut your squash manually into small thin slices.

Than take your shredded veggies and place in large bowl and toss with coconut oil and apple cider vinegar and salt.

Place veggie mixture onto a dehydrator sheet and let dehydrate for about 1 hour.

Time for butter sauce ;)

Pure2Raw Recipe: Pecan Butter Sauce

*reasons for pecans…. We typically don’t eat pecans though we thought they would do the best as a butter sauce. Why we don’t eat them because it is just not one of our favorite nut to eat.

Ingredients:

  • 1 cup Pecans
  • 4 tbsp shallots, chopped
  • about 10-12 tbsp water
  • 1 tbsp yacon syrup (can use agave or honey)
  • 1 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp thyme

Directions:

Place all ingredients into blender and blend till creamy!

We tasted it and it just needed something else so we added nutmeg and thyme

And here is the simple butter sauce ( we like simple sauces… so if you like more eat add in some cayenne or your favorite spice)

We decided to toss our shredded brussel sprouts and squash with the pecan sauce then put it back in the dehydrator to “uncook” some more.

This meal was so yummy,  we were actually surprised because we made this recipe at the last minute. We have been seeing a lot of brussel sprout dishes and we wanted to do something. The pecans really helped make it taste “buttery”.  We are very pleased with the results.

Raw Green Bean Casserole

Theme Week – Holiday Meal #2

Good morning!

As promised here is the recipe for the classic holiday side dish green bean casserole. We were really pleased how it turned out ; )

Pure2Raw Recipe: Semi Raw Green been casserole

Ingredients:

  • About ½ lb of green beans, washed and trimmed
  • 1 tbsp coconut oil

Directions:

Place coconut oil in saucepan over medium heat. Add in your green beans a lightly sauté till your desired tenderness ( we let ours go for about 4-5 minutes)

Now we did in ours in a skillet, but you could also lightly steam them.

When done set that in a bowl and get ready to make sauce.

Pure2Raw Recipe: Raw Creamy White sauce

Now our sauce base is not your usually cream of mushroom soup. We were making pumpkin milk the other day and had left sunflower seeds so we threw those it too. Why not, right? Well some of the pulp was thicker. So we got to thinking I wonder if this would make a good sauce? What the heck… let’s try and see!

VIOLA! Our base for green bean casserole was born.

Ingredients:

  • 1 cup of sunflower pumpkin seed milk pulp (substitute soaked sunflower seeds)
  • 1 tbsp tahini
  • 1 tbsp apple cider vinegar
  • 1 date (you can use agave or honey, or stevia)
  • 1 tsp sunflower lecithin (can use soy lecithin or just omit)
  • ½ tsp salt
  • pinch black pepper
  • ½ tsp thyme
  • 1 small shallot or half of one

Directions:

Place all ingredients into blender and blend till creamy!

Time to pour the sauce over the green beans

And stir sauce around to make sure all green beans are coated.

Now time for topping

Topping:

Caramelized onions

What you need:

  • Half of white onion sliced thinly
  • 1-2 tbsp Olive oil
  • Splash Balsamic vinegar
  • Pinch salt

Directions:

Coat the onions with olive oil and balsamic vinegar

Spread out onto dehydrator sheet

Then we dehydrated them for a few hours. Or you may do this in a skillet. The way I used to eat cooked onions was using very little oil and high heat. It doesn’t take too long, but I used to love crispy, burnt things so I would let it go longer than most people :)

Now to put the whole dish together. Simply top your coated green beans with some of the caramelized onions.

And there you have it folks a nice, simple semi-raw, vegan, gluten free healthy side dish for your holiday meals.

Unplanned schedule remember to breathe

Hello loves,

Thanks to everyone with your supportive comments, I know Lori appreciated them all! I will do my job and try to keep her positive about it all!

Twins Workout:

Lori and I got up this morning and went for another 6 mile run. But wait… that is not your typically training schedule. Well with everything in life, things got in the way we actually have not really had the perfect training schedule. We were not able to run our long run today, so knowing that we decided to break up our long run over the week. This way we are still getting mileage on our feet!

We did 6 miles yesterday and did another 6 today. We hope to do another 6 tomorrow but it might be Thursday. We are learning to go with the flow and run whenever we get a chance. Lately, we have been loving our yoga, despite having all this craziness in our life right now, yoga really helps ground us. Thank goodness for yoga.

Yoga reminds us to breathe!!

One of my favorite quotes is from the movie, Ever After starring Drew Barrymore, anyone seen it? It is Cinderella story, anyways there is one big part in the movie where she is at the Prince’s ball and every turns to look at her, and she says, “Just breathe!”

I do not know why I love that I just do. Whenever I get overwhelmed I picture this part in the movie….does anyone else have a movie or anything they do that helps relieve some stress or help you remember to breathe?

So how have we been feeling on our runs?

We both like our Nike free shoes, so happy with that purchase. We still have not purchases our marathon outfit yet. We have some other race clothes we have worn before so have been running in those, but I know it is important to get used to the clothes you will wear for the race.

We both have noticed what things help us during our runs and what has not. For instance what we eat the night before affects us the most! Therefore we are going to try to keep our dinners simple if possible and try to have it be a smoothie of some sort.

Overall we both feel we are doing well with our training. Trying not to panic about the race…getting close only 8 weeks away. YIKES = ) Some nerves are kicking in as to why I signed up for another marathon?? Can I do it again?

Twins Eats

Pre-workout/BK: Green Mush – buckwheat (soaked and sprouted), coconut oil, lemon, spirulina, cacao nibs (we blend ours in blender to make it a mush, so easier on the tummies)

2 Green smoothies (lunch/dinner)

late lunch/snack – Spiced homemade Sauerkraut and semi-raw green been casserole (this is part of our theme week – holiday meal)

We have been loving our raw sauerkraut. At first we were scared to eat let alone make it homemade ;) Now we are obsessed with it… go figure!  Do you ever get intimidated when trying something new… sometimes it can be scary at first but we have learned if you have an open mind you just might end up liking it. And in this case – obsessing over raw sauerkraut I do not feel is a bad thing!

And lately we have been ending our nights with a cup of warm spiced pumpkin milk. We use our seed milk and warm it up on the stovetop and throw in spices (cinnamon, ginger, allspice, cardamom). We have been enjoying this as our night cap ; )

Raw sauerkraut avocado sandwich for lunch, please

Theme week: Holiday meals

Good evening friends,

Well I would love to say that today was a great day… I mean the sun was finally out, got a good workout in, got orders done and things ready for the week. Though, I had a break down again… who am I kidding I have one everyday. My depression is still lingering around. The funny thing is that it feels like Michelle and I have switched roles. Now I am the one struggling to be happy and she is doing her best to cheer me up!

Why the break downs: well I thought my skin was finally clearing up but these past two days it seems to have gotten worse again. :( I am not sure what I did different with my diet or exercise to have led me here again. Grrrr. Anyways sorry for my rant. I had to get it off my chest… they say that is the best thing to do.

Ok… enough of the emotional stuff.

Twins Workout:

6 mile run (finished in 57 minutes)

45 minutes of power vinyasa flow from yogadownload

Twins Eats:

Bk- green smoothie

Pre-workout snack- our raw chocolate coffee (water, carob, lucuma, mesquite, cacao, dates, coconut oil)

Post-workout snack- hemp protein shake with chorella, maca, and stevia

Lunch: raw sauerkraut avocado sandwich

Now time for our theme week day one of holiday meals!

Today Michelle and I got to play in the kitchen with some holiday recipes that we used to eat cooked and wanted to see if we could re-create them raw. And here is what we created:

Pure2Raw Recipe: Raw roasted veggies

Ingredients:

  • 1 beet, skinned
  • half white onion
  • 2 garlics
  • 1 carrot, skinned
  • 1 acorn squash
  • 3-4 tbsp olive oil
  • 1 tsp dried rosemary
  • 1/2 tsp thyme
  • 1/2 tsp sage
  • 1 tsp salt

Directions:

Clean all veggies and gather all other ingredients

Time to start cutting all the veggies

Thinly slice carrots

Next thinly slice beets (don’t you just love our beets stain everything)

Finishing slicing the remaining of veggies and then toss them all into a bowl

Than add your olive oil, garlic, and spices. Toss to coat!

Take your veggie mixture and spread onto dehydrator tray

Let these veggies dehydrate till soft. We did our overnight. Remember they will shrink in size!

And that is it for that recipe. Once they get to your desired texture they are ready to go. Place on a plate and enjoy!

Pure2Raw Recipe: Second up –Raw creamy Spinach

Ingredients:

  • about 1 lb of spinach
  • 4 tbsp hemp milk or any non- dairy milk of your choice
  • 6 tbsp hemp seeds
  • 1 small zucchini, lightly skinned
  • 1 tbsp coconut butter
  • 2 tbsp nutritional yeast
  • 1 tsp lemon juice, more for wilting down spinach
  • 1 tsp salt
  • 1 garlic
  • 1 tsp dried basil
  • pinch nutmeg

Directions:

Place spinach in large bowl.

Gather remaining ingredients and grab blender.

Place hemp milk – we like to use Living harvest unsweetened vanilla

and hemp seeds into blender.

And blend together for a few seconds.

Next add in your garlic ( now you can peel off the skin of garlic) We used our garlic press to do the work.

Next zucchini

We lightly skinned ours ( we did this because we did not want the sauce to turn green)

Into the blender it goes…

Blend till nice and creamy

And volia you have youself a delicious creamy dressing for your spinach!

Here is when you get messy

Now all you have to do is start massaging the spinach with your hands till it starts to wilt down. You can add a little bit more lemon juice to help.

And that is it. Time to plate up! We topped ours with a little bit more hemp seeds.

If you are looking for more of the cooked route here is what I recommend: roast the veggies in your oven at 350 for about 30 minutes or till tender. And for the spinach you can sauté the spinach up some before adding the sauce.

We are leaving

Hey everyone,

Happy Monday morning! Yep you heard us right we are leaving don’t worry not the blog world I mean we are going home for the Thanksgiving Holiday!

Michelle and I are planning on heading home this coming Saturday so if any Florida bloggers want to meet up let us know. We are heading down first to visit our friend Gina in her neck of the woods. Than heading to Orlando to see our other older sister than finally home.

We are getting ready for theme week #2! Aren’t you excited!! ;)

This week theme is Holiday Meals. We plan to share some recipes that hopefully help or inspire you during this Holiday season. We are taking some of our favorite holiday meals and putting our twist on them and cf course they will be all gluten free, vegan, and majority raw :) If you just have an open mind the possibilities are endless. * We will give tips if you would like to make these recipes cooked.

Ok now for more exciting news. First a while back we mentioned that we had some exciting new to share in regards to our oldest sister. Well… we found out the she is pregnant and it has be confirmed! :) We are so happy for our sister and that we are going to be aunts!

It has been awhile since Michelle and I drove home so this road trip should be interesting ;) We plan to bring a few extra items (blender, dehydrator, plus lots of goodies) with us because our trip home is going to be longer than normal.Get ready everyone for hanging out with the Corso’s this Holiday! It is always a good interesting time.

And we get to see one of our favorite boyfriends!!!

End of raw dessert week

How was everyone’s Sunday? Good I hope :)

I must say I can’t complain especially when this was my breakfast

Our raw sauerkraut is done fermenting. We let this batch go for 3 weeks.

We called this a twisted pumpkin pie because we followed Averie’s base and idea but put our own twist on it :)

I must say creating all these delicious desserts was so much fun we plan to do another dessert week again soon :) We have so many more ideas that we want to share… we get so excited about creating new raw food recipes… :) We are dorks!

Pure2Raw Recipe: Twisted Pumpkin Pie

Crust/Crumb topping Ingredients:

1/2 cup almond meal

2 dates, pitted

Throw the whole 2 ingredients into a blender and blend till crumbly.

**now our goal with this crust was to create more crumb texture therefore we did not add any agave or more dates. If we did that it would have turned out more like a crust ( real sticky and holding together well)

Here is what our crumb topping looked like

Pumpkin Pie Filling

Ingredients:

  • 1 cup pumpkin puree (fresh pumpkin – the more raw route or canned – whatever you have or prefer)
  • 2 dates, pitted
  • 2 tbsp irish moss **optional – we added this because it really helps lighten recipes
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • pinch ginger
  • pinch nutmeg
  • 4 tbsp water

Directions:

Place all ingredients into a blender

Here is what irish moss looks like when you are done soaking it and than pureeing it up

Puree all ingredients till fully combined (it takes a little bit due to the dates)

AND THAT IS IT!!! EASY as 1-2-3!!

Now time to plate up and enjoy. We put ours in ramekins for more individual servings.

Now we topped ours with some of our raw whip cream from the other day!! This is optional you can just put the crumb topping on.

Theme week: Dessert

Hey loves,

How was everyone’s Saturday? Good I hope, despite the nasty weather here our has been alright. Thank you all for the nice comments about our SMORES! We look forward in seeing your smore creations : )

We managed to get in bed at midnight last night : ) Then we got up at 5am to get things ready for the market.  This is sleeping in for us because now the market starts at 9am instead of 7am!!

~off topic real quick, I wanted to share a funny story. I twittered about it when it happened, but just had to share it again. It is too funny not to share…Well as you all know we make raw green flat breads so I had a variety on my table. This random guy (now I mean random) come up to my table and started looking at the breads. And then he asked me, “Oh what is Swiss Chard? Is it some type of fancy cheese?”

I did my best not to laugh, but I nicely explained that swiss chard is a green leafy vegetable. Please keep in mind that these breads are green….

IMG_1288I am not sure how he associated a green bread with cheese especially it coming from a vegan company?? I told Lori this story and saddens us that most people do not even know what a green leafy vegetable is, let alone a vegetable in general. Is this what our society has come to?? : (

Okay back on topic..

Before heading out we finished off our raw yogurt and we topped it with fresh raspberries : )  We are so in love with our yogurt, we get so sad when it is gone : (

Our lunch was a mix of kale chips, raw brownie bites, raw cheez crackers, and a gluten free vegan chocolate crumb cupcake….oh and plus a green smoothie.  What a unique lunch, huh? Well that is our Saturday we eat whatever we can get our hands on (we are too tired from the market to fix anything fancy).

Although tonight we are creating another classic dessert, and it is perfect for this time of year.

This recipes is inspired from our friend Averie. She did a post recently where she shared not 1 but 2 recipes of pumpkin pie….and ever since we saw it we have been waiting pumpkin pie. So here is our version from the very talent Averie!

Truly the best way to end a long week

Theme week: Raw Desserts

Good evening everyone,

Hope you all had a great day. We have been none stop here in the kitchen the past two days with birthday cake orders and farmers markets…oh and plus making raw desserts : )

Our morning started off with a green smoothie coffee and raw yogurt.  Not sure how the coffee got in there…haha…note: do not let Michelle go to Whole foods first thing in the morning on a cold rainy day ; )

IMG_1674We sprinkled our raw yogurt with hemp seeds and pomegranates…holiday colors, how festive!

Later on we had an extra large green smoothie that we sipped on all afternoon!

Twins Workout:

We did manage to squeeze in a quick 3 mile run followed by 20 minutes of core yoga. We had a great run despite that it was rainy and 50 degrees out not including the wind chill! We both felt amazing…these are the days we enjoy running. No aches or pains just enjoying the run! We also wore our new Nike Free Shoes for the first time and both of us loved them : )

Dinner was another green smoothie and dessert was…

As we mentioned in our previous post we wanted to tackle the classic dessert: SMORES. We all have our own memories of smores when were kids. Since we grew up in Florida with no fireplace we never really got to have them much. Although whenever we took family vacations out west or somewhere in the mountains we always stayed in place that had a fireplace, which meant SMORES.

Yes we made our dad start the fire in the middle of summer so we could have roasted marshmallows with melted chocolate and graham crackers : )  I sure wish I had pictures of those times to show you all….what is your memory of smores ? Did you have a fireplace growing up?

Pure2Raw Recipe: Smores

Cookie:

  • 1 3/4 cup nut flour or whatever flour your prefer (we used a mix of sunflower flour, pumpkin flour, almond flour, and coconut flour)
  • 1/4 cup yacon powder (if do not have this just add more flour and up your sweetness)
  • 1/4 cup water
  • 1 tbsp vanilla
  • 2 tsp cinnamon
  • pinch salt
  • 1 tbsp yacon syrup or sweetener of choice

In large bowl stir ingredients together.

Then spread onto a dehydrator sheet and dehydrate at 115 for as long as you can stand.

IMG_1685Our cookies dehydrated for about 6 hours, they were a little soft but we like undercooked cookies : ) So you be the judge.

Next up Marshmallow Creme

  • 1/2 cup soaked cashews
  • 1/2 cup coconut butter (soften it a little in the dehydrator so it makes it easier to work with)
  • 1/2 tbsp vanilla
  • 10 drops of liquid stevia
  • 2 tbsp coconut oil

Place all ingredients in the blender and blend.

IMG_1704We added 2 tbsp water and 1 tbsp maple syrup (I know not raw but we wanted that flavor) to help it get creamy…

IMG_1715Now if you would like it to taste more like marshmallows there is an extract you can buy online, but we are too lazy to do that..LOL>

Set the creme aside and now time for chocolate sauce. You can use any of your favorite chocolate sauce! Ours was made up of raw cacao, agave, and coconut oil.

Note this recipe is not 100% raw due to the maple syrup, also if you do not have dehydrator you can use any of your own cookies and then just make the raw creme and chocolate sauce. We feel some raw is better than none : )

Although if you wanted to keep it raw and did not have a dehydrator you can add coconut oil (maybe reduce water and add the oil) and then set in freezer to harden up. Lots of options folks!

Reasons why we love this recipe:

  • nothing like enjoying a classic dessert guilt free
  • there was enough for seconds (Gina and Erica we ate more in honor of you guys!)
  • full flavor explosion in the mouth
  • smores are best buds with fireplaces
  • made with love from start to finish

Oh Katie we think these would make awesome fudge babies for Operation Chocolate Covered Kindness! I am sure there is a way to turn this into balls…hmmm, got me thinking ; )
