Sorry for the late post but today has been the longest day ever. This is the first time I have been in front of the computer all day, which actually is not a bad thing for a Saturday. But just wanted to stop in and say hey and hope you are having a great Saturday. We will explain our day tomorrow….too tired.

Happy Friday everyone!
Wow this week flew by. We have been busy here, and if you follow us twitter you would of seen that last night we got interviewed for a feature in a local paper in regards to raw foods in the area. It was very exciting to hear about all the things raw in our area, it is small but at least something. We will let you all know more once we hear more. ; )
Today we are going to update you all on our hormones. As you all know we have shared our issues with hormonal imbalance and birth control before. I know many of you suffer from hormone issues of your own and some of you have asked to give an update of how we are doing.
First, how is Michelle?
Last week I was a mess. My hormones were all over the place…my emotions, my appetite, my sleep patterns, my energy…I was not myself. I was eating more cooked food than normal…more sweets than normal. I started to get really bloated and then on Monday I woke up to realize I got my period!!!! So it explains my behavior and symptoms, but now I forgot what it feels like to have one. Remember it has been a little over a year since I stopped birth control, which is when I stopped getting my period. My skin still has breakouts, but I have seen improvements. I do not really have much else to say because this is just the first time since I have my period in year, so I will just have to wait and see how each month from now on goes. I will keep you posted. But I do believe my new changes in my diet have helped balance me, but again I am not healed yet, still have a journey.
I will now hand it over to Lori.
I have no idea. I mean really that is how I feel. I am not sure where or how my body/hormones are doing. I have my ups and downs still, no period yet for me. My breakouts are slowing down but are still happening. My overall skin appearance is alright, still have a long journey to go. I am staying optimistic because I know that everything that I am doing with my diet is going to work just have to give it more time. My sleeping has been great lately and my appetite strong. I still crave sweets but not as much as I used too. I have really been wanting my sauerkraut and smoothies
It seems that I go through stages with my eats (which I am sure many people do) one week all I want is chocolate and than the very next week I do not want any; I want more savory things. I am still trying to figure everything out but taking one day at a time. Really liking all the fermented foods and msm. I have incorporated more into my diet. I feel they are really helping.
Well as you can see we both are still on a journey as each of you too. So we say hang in there and treat your body good with good food, exercise, and relaxation, and give it time!
Yesterday was a nice sunny, but cold day here yet we felt like going for a run. So we layered up and headed outside for a quick 25 minute run. Then followed the run with some Tracy Anderson mat workout. It was a hard intense workout yesterday, both of us were tired by the end. Luved it.
What did we eat afterwards to helps us recover?

- Post-workout iron filled smoothie
Green smoothie filled with hemp protein, parsley, pumpkin seeds, lemon, yacon, maca and camu camu (high in Vitamin C,which helps absorb iron). Perfect! Very filling!
Check out our comforting dinner last night….semi raw fermented dinner ; )
Millet with sauerkraut, fermented veggies, cilantro, and coconut oil.

It totally hit the spot last night for both of us. Just needed something warm and comforting. It has a very long time since we have had millet. It was a nice change
So good…wanted more ; ) Love millet!! So easy to digest and quick to make.
Now onto something exciting….we finally made raw bread!!! This is a recipe we have practiced over and over and finally think we have it!!!

Now this is not your typically large loaf of bread, but for us this actually tasted like bread. It was moist, good texture, and very satisfying. This bread is not only raw but gluten free, vegan and nut free

Perfect with a nut butter…we chose walnut butter which is a mixed of walnuts and cashews. The amazing people over at Artisana sent us some extra samples of some of their nut butters. You all know we love their coconut oil and butter, so we were excited to try the nut butters. 

It was creamy, rich, and wonderful flavor! It did not have to much of a walnut flavor which we liked. The texture was perfect for spreading onto our slice of bread!

We are very pleased with our raw bread!

Very smooth! A great source of your omega’s 3 and 6. We love our GOOD healthy FATS! Another great thing about this company is that their products are made in a facility that does not handle any peanuts, gluten, dairy, or GMO’s!
Love that and we really enjoyed this walnut butter. The only con about their products is that they do not soak their nuts. But still a great buy in our opinion.

Hey luvs
Glad to see everyone enjoyed our version of the childhood classic Oatmeal Kreme Pie Cookie.
Lori and I have been trying to create new pre-workout snacks, because the ones from the marathon worked so well for us that we are interested in creating more.
Check out the one we created yesterday:

Can you guess what it is??
It was so good!! You all know we love our puddings ; )
This one was a blend of our coconut kefir mixed with banana, coconut oil, dates, vanilla, spirulina, maca, and sprinkled with cacao nibs
We just finished reading the latest book from the wonderful Brendan Brazier and we would like to thank the team of Vega for sending us the book to read!! We loved it!
Brendan’s new book is a continuation of his first book Thrive, another great read if you have not read it already! Thrive focused on the basics of fitness and the importance of proper nutrition. Thrive Fitness is geared to improving your athletic performance. Now some people may be thinking they are not athletes, but I feel anyone who loves to get a good workout in is an athlete. There are just different levels of athletes ; ) because there are all types of exercise!!
We feel everyone would benefit from reading Brendan’s new book. Individuals new to working out would start to see the benefits of a regular fitness routine. As veterans you can see how you can improve your endurance and stamina. Now what person does not what that for their workouts ? People who just workout on an everyday bases, like us, would benefit because there are little tips that you may not have thought to try before, plus there are more great recipes!!
We love how Brendan refers to it as lifestyle. Lori and I totally agree because change does not happen overnight. We have to constantly work at it, but the key is to find something that you enjoy. As Brendan says, if you enjoy something you tend to stick with it!
I enjoyed learning more about short high intensity trainings. Back in high school I can attest that this works because over the summers we would have some hard intense training sessions with our volleyball coach. Nothing like you can imagine. We did all types of jump training activities out the hot Florida heat, followed by sprints, running up and down bleachers. Well to make my point, at the beginning of our training our coach measured our performance on a few things, one was our vertical jump. And at the end of the summer Lori and I both improved our vertical jump by 7 IN!!!! That is huge!!! Our coach was blown away…I must say we both were in the best shape of our lives then. Oh sometimes I wish I could go back….sometimes ; )
I would recommend everyone to read Thrive Fitness because whether you are a beginner or seasonal athlete, each person can learn and take what they want away from Brendan’s tips. And I love learning something new ; ) We should all look at ourselves as everyday students. That you can never learn too much, that everyone has something new to bring to the table.
Brendan does a great job reviewing what key ingredients are needed for good fitness. I like how he has a nutrition and training log, which is great for those who need to visualize things to reach their goals. Lori and I both have been enjoying our new style of workouts and are excited to try some of Brendan’s recipes to see if we notice anything from them.

Hey everyone
How is your Friday?? So glad everyone enjoyed our story about us becoming bakers and creating Twin Cakes Bakery. In cased you missed them you read them here, Part 1 and Part 2.

We have been extremely busy here…non-stop in the kitchen getting all our Twin Cakes Valentine’s Day Orders in.
We even didn’t get to eat till after 1. Just been snacking on this and that in the morning…a random day of eats for us. But the weird thing is that we have been feeling good. By not eating too much in the morning has actually given us more energy…which sometimes is hard for us because we were raised you have to eat breakfast.
Well this maybe true but we are starting to realize for us not having a huge breakfast has been nice for our energy levels. It is hard not to eat right away in the morning, but as long as we are busy we do not even think about eating, sort of ; )
Do you have mornings were you do not eat much? How do you feel? What are your thoughts on eating breakfast or no breakfast?
Now do not get us wrong, we do eat something, just not a full blow meal! And this past week we have not been eating till around 10 am. We are playing around with our morning eats, which means we have been having later workouts. We will keep you posted, but in the mean time check out Gena’s great tips for breakfast. I could go for some of those green eggs!!!
Anyways here are some food we have been eating these past few days

Kraut Salad drizzled with tahini

Avocado pudding drizzled with yacon

roasted butternut squash & brussel sprouts, with fermented veggies and some white stuff, aka coconut oil ; )

Coconut kefir pudding with coconut oil, hemp protein and yacon

pure2raw cracker wtih tahini (that we blended with cashews and maple)...sweet and savory!!

Hey luvs
Our friend Lori had asked us to share our story about Twin Cakes Bakery. So grab yourself a something good to eat or drink here we go with your story. We hope you enjoy…
Background:
First, here is a little background on who are the twins. We were born and raised in Fort Myers, FL. We have two older sisters; we have Italian/German in our blood so food was a main topic in our family. We were definitely that family who continual looked forward to our next meals!
Don’t you just love my little grin and how Lori is not looking at the camera?? Love our brown paper lunch bags??
From a very young age were taught to make our own food mainly due to having 4 girls in the house we all wanted something different.
And now we are all grown-up : (

Lori and I really had some unique food habits. We ate completely different things while growing up. Lori wanted everything plain and I wanted everything with either cheese or mayo (which Lori hated both). Our mom was smart, a great way to avoid many fights she made us start packing our own lunches. This was the beginning for us girls to fall in love with cooking.
When did we start baking:
Although our baking really did not start till we were in high school. Our second oldest sis, Jen, was the one that taught us to bake. She loved it and still does, but due to severe food allergies she no long gets in the kitchen as much. She would create some delicious things for us to enjoy…our favorite mint chocolate chip cookie sandwiches, cinnamon buns, her famous sour cream coffee cake, and much more. As she went off to college, we started playing in the kitchen. And realized we loved baking!
Our grandma’s side of the family were German bread bakers, so I guess you could say baking runs in our family. It is in our blood to make things for others. All throughout college we would bake for our teachers, family members and friends. Everyone loved it!! And so did we! We got more joy for baking for others than ourselves.

How did you know you were going to have your own company?
We both majored in business during college. During college we worked for an entrepreneur so we got to see what was involved in starting a company from scratch. We knew we would have our own company one day just not sure what that would be nor when. After college we went home for a year to figure out what we wanted to do with our life…like most college grads due, right??
What happened next?
Well to make a long story short Lori moved to Richmond, VA as Michelle moved to Denver, CO. Both of us felt we needed to finally spilt up after 23 years of being together! Well as we both worked for other companies we started realizing what we were doing was not making us happy! So the massive research began and our dream started to be come real on paper. After many hours of talking on the phone, emails, and texting we knew it was going to be an online bakery. We wanted it to be a different type of bakery but still was not sure exactly what that would be. We had so many crazy ideas running around in our heads.
How do you realize you had food allergies?
We started to experiment with alternative foods and diets. We tried all different types of cleanses, food combinations, etc. because all during college we suffered from stomach issues. This is a health problem that our whole family suffers from but we did not really know why we were always feeling so bad all the time. We thought we were eating healthy. Nothing really worked.
Then our health started deteriorating and we started eliminating things out of our diet. We realized our bodies did not like gluten, wheat, peanuts, and dairy. For us we were never upset that we could not enjoy certain foods. We were actually excited to finally start feeling better and actually eating this way helped make us eat healthier. And we slowly starting cutting back on our meat intake. We were never really big red meat eaters though we did like our chicken and fish. But after years of still not feeling better we decided to try anything that help and if that meant no meat, etc. then so be it.
What changed?
We got more relief once we stop eating meat though we still were not 100% better. This lead us to even more confusion and determination to figure our health out.
Another year past and we both ended up in Raleigh, NC. Still working for other people, ugh. We kept working on the side as we also figured out what our bodies liked to eat and not eat. We then started creating meals that were safe for us and realized we wanted to help others that had limited diets.
Overtime and more research, our business plan changed (we wrote two different business plans, which is a must if you are thinking of opening a business). We decided to start as personal chefs and put our online bakery on hold.
How did we chose this career?
People reminded us since we love to bake and cook why don’t we do it for a living. It was like light bulb going off in our heads. So then came about Twins Kitchen Personal Chef Service, yep we both got certified through United States Personal Chef Association. And our first few months of business was a test. We both did not have good sales skills and had to learn to go out and sell ourselves. You must learn to grow thick skin! We gained some clients but realized there was still something missing. We were not having as much fun as we had thought having your own business would be.
Let me tell you starting up a company is not as easy as it may sound…unless you have tons and tons of money saved up. Now we had some savings, but still nothing to prepare us for what we thought. It takes a lot of work, many long hours and lots of sacrifices.
What happened next?
Baking!
That was the missing link. Sure we still enjoy cooking but baking was what we really enjoyed and could do it all day long. So we signed ourselves up for farmers markets, and that is when everything changed.

Good morning luvs,
Happy Friday to you all!
Lori and I are so happy to see that everyone is loving our chocolate gluten free vegan layered cake!!!! The cake was rich and delicious
We found out that if you put it into the dehydrator for a little bit it warms it up!!! Heavenly!!!

We will do a post soon about all the ‘special’ ingredients that we used in the layered cake! We are still learning how to use some of them to get the best results! We plan to recreate this cake without using any nuts!!!
Hard to believe another week went by. Though Lori and I have been managing to eat some really great food
Lots of our favorite breakfast : green smoothies


Some coconut kefir shakes

Creamy and thick
carob mint avocado pudding


Sauerkraut and fermented veggies mix with grinded up hemp seeds (helps make it look like crumbled cheese
ok well at least to me it does

Made some chia puddings
This was mixed with some mesquite (which we used to use all the time and forgot how much we love the flavor it provides), and yacon powder We love Navitas Naturals!
and than drizzled coconut butter on top

Seriously coconut butter is such a little treat for us
Best thing ever!!! I think Katie and Krissy would agree!
Lori and I can’t get enough of this stuff! It is like having icing on a cake
Also enjoyed some of Lori’s favorite raw sauerkraut – red cabbage base with a little bit of kale in there.

Also created a veggie sandwich
I took our Pure2Raw collard green flatbread, some romaine leaves, and tahini!
Easy, full of flavor and texture, few ingredients, and quick dinner
Love it!!!!
How I made it:
Grab ingredients
Layered onion flatbread with loads of tahini
love this stuff too!

Anything with tahini on it creates a perfect marriage in our opinion!!
Than time to build sandwich, you just take your romaine and layer the leaves between your tahini covered bread!
And you have yourself a veggie sandwich that is gluten free
YAY!
Than time to devour the sandwich
Fantastic!

And than if you did not have enough tahini you can dip in a pure2raw pumpkin kale cracker into it

But last nights dinner was a treat and made us think of Heather
We roasted some Kabocha squash with some sautéed asparagus.

And we drizzled our quick easy 2 ingredient sauce:
Nutritional yeast and coconut oil
And sprinkled cinnamon and coriander seeds to finish the dish

We have forgotten how much we love roasted squash. It has been too long and we are sad that the winter squash season is coming to an end ; (
The flavors blended so well and literally just melted in our mouths. We love coriander!! We can see how this is Heather’s favorite squash.
Our friend Lori had a fun way to enjoy sea vegetables with squash, we will have to try that next time ; )
We are preparing ourselves for another cold, wet, snowy weekend!! But we are excited for the big game, have some fun food we are making ; ) and will share our Superbowl eats!!

Hey friends,
Here it is Monday again hopefully everyone had a wonderful and safe weekend!
The twins sure did – we stayed inside ALL weekend long!! We did manage to get lots of work done and watched some movies mainly the Bourne Trilogy! We are in love
Our eats for the weekend were filled with delicious green smoothies, fermented veggies, and a yummy dessert (more on that later)
We tried a new vegetable combination for our fermented veggies this week.
We added in some broccoli to the mix. Not sure if we are a fan of fermented broccoli ?!?!?! Having roasted broccoli is still our favorite!
Had some roasted brussels sprouts and acorn squash with rosemary
Scrumptious!
But last night’s dinner we took Gena’s creamy hemp basil sauce and put our little twist on it
Pure2Raw Remake of Gena’s Recipe of Creamy Hemp Basil Sauce
- 1/2 cup hemp seeds
- 1/2 cup water
- 4 tsp lime juice
- 1/4 tsp sea salt
- 1 date (used medjool)
- 1/4 cup fresh basil
- small handful of fresh parsley
Put all the ingredients into a blender and blend till smooth!
We poured our creamy hemp sauce over our favorite noodles – kelp!


Ended up eating our creamy hemp kelp noodles with 2 slices of our raw onion flatbread
Gena your recipe is brilliant and easy. Love the nutty flavor from the hemp seeds and the creaminess they provide this sauce. The hint of basil helps round out the whole dish with a splash of sweetness from the date. Heavenly!!!

Another week has come and gone.

Celery Root Squash Mash
Yep you heard me right! Not your average mash is it? We have done this one before lots of times but different versions of it. This one has a few little twist in it
I know mash potatoes are a classic for many people but promise this one is a good replacement!
And the best part not many ingredients and very easy to make!
Pure2Raw Recipe: Celery Root Squash Mash
Ingredients:
- 1 small celery root, chopped (about 1 cup)
- 1 small butternut squash, chopped (about 2 cups)
- few fresh sage leaves
- 2-3 tbsp coconut oil, liquid
- about 1 inch lemongrass
- 2 garlic cloves
- 1/2 cup water
Directions:
Pre-heat oven to 350 degrees.
Peel and chop both celery root and butternut squash. Place on aluminum foil on baking sheet.
Pour your coconut oil over your veggies and place sage leaves on top.


Place veggies into oven and let roast for about 40-45 minutes or till just tender. (you want to be able to put a fork through them with ease)

Once done, let veggies cool and transfer to blender or use a hand held blender and puree till smooth.
Add in the special ingredient: lemongrass

I cut it up with scissors before pureeing it up, it helps make sure it gets well blended!
Add in 1/2 cup water, 2 garlics to blender along with roasted vegetables.

It is that easy!

Time in devour! Creamy and full of flavor. A little sweet too

This veggie mash goes great with sauerkraut and hemp seeds

Well in my opinion! It would go great with just about any companion! It is looks cheezy too from the squash, double bonus because much healthier! Because there is not cheese in there! YAY! Also great for people watching their nightshade vegetables -there is no potatoes!
