We are loving the favorite romantic movies comments happening on our Valentine’s day giveaway!!!
Oh all the love is in the air
Going back to our tasty and easy Superbowl recipes that many of you requested to see I will share some here and the others will be posted under our recipes tab.
First recipe is our Kabocha Lime Guacamole

This recipe is super easy and taste amazing!!! A fan favorite for all
And who doesn’t love some guacamole?
© 2010 Pure2Raw Recipe: Kabocha Lime Guacamole
Ingredients:
- 2 avocadoes
- 1/4 cup puree roasted kabocha squash
- 2 garlic’s
- 1/4 tsp salt
- handful of fresh cilantro
- 1 scallion
- 1 lime zest and juice
Directions:
Place all ingredients into a large bowl and mash up using a fork!

We like to have our guacamole a little on the thick and chunky side. Though we can mash it up as pureed or chunky as you like

Leaves such a fun color don’t you think? And taste unbelievable!
That’s it for that recipe, so simple you just need a bowl and a good fork
Next recipe is our Cheezy pepper nacho sauce
Again a very simple recipe with a little twist in it! We added some of our roasted kabocha squash to it as well
And let me tell you this brought the sauce to a whole new level, a little bit of sweetness for the squash! YUM!

© 2010 Pure2Raw Recipe: Cheezy pepper nacho sauce
Ingredients:
- 1 red pepper
- 3/4 cup nutritional yeast (we love this stuff)
- pinch sea salt
- handful of fresh parsley
- 2 garlic’s
- 1/2 zucchini
- splash of water
- 1 tbsp tahini
- 1/2 tsp turmeric
- 1 tbsp sunflower lecithin *you may use guar gum or xanthan gum (about 1/4 to 1/2 tsp)
- 2 tbsp kabocha squash puree *if you do not have any veggie puree made you can just add a dash of sweetness from agave nectar
Directions:
Place all ingredients into food processor or blender and blend till creamy and well combined. Ours we a little on the runny side

And enjoy over some crackers or chips (or pictured here our pure2raw rosemary crackers)

Hey everyone
Congrats to the Saints for being Superbowl Champs!!! Michelle was cheering for them as I was for the Colts!!
Anyways we wanted to share want we enjoyed yesterday for the big game. Even some of our friends took some nibbles and approved ; )
First up:
Pure2Raw Kabocha Lime Guacamole

Yes we still had some leftover roasted Kabocha squash that we thought why not add it into our guacamole?? We enjoyed this with some of our Pumpkin Seed Kale Crackers…Perfect match!

It was soooo good!! Creamy, limey, & a little bit of sweetness from the kabocha squash, Heather inspired appetizer!
We are loving this squash…in everything!!
And of course we could not go a day without our fermented foods

Mixed in our guacamole in with kraut &veggies
Next:
Pure2raw Cheezy Pepper Nachos
We poured the cheezy sauce over our Rosemary Crackers.
We just went for the plain cheez and cracker (our chip) match ; ) No fancy toppings for us, sorry we are boring.
And FINALLY
Pure2raw Club Sandwich
And it featured some eggplant bacon, courtesy of Matthew Kenney and we know Mrs. Fitnessista loves some eggplant bacon!!
Oh did we eat this??
Well it was a little messy, but that was okay it was worth it ; ) It was actually kind of weird for us to eat a sandwich…. having a raw sandwich at that! We were eating a sandwich just like everyone else
The bread is some of Pure2raw buckwheat bread (we will add this product soon) Heavenly
YUMMY!
Overall we had lots of good eats that we were willing to share with others. It was great day to eat some special treats!
But wait what about dessert…
Pure2Raw Snickerdoodle Cupcakes
Inspiration from Chocolate Covered Katie snickerdoodle oatmeal.
PERFECT!!!
Seriously our best cupcake yet!! Love the blend of sugar and cinnamon ; )
Our friends even enjoyed some of these
Snickerdoodle cookies. They loved them!! No one could guess they were raw cookies! We are going to have to make more.

Hello everyone
Let me just say we had a pretty good day today. Our morning started with this:

Delicious chocolate crepe
Yay, so far off to a good start. Nothing like chocolate for breakfast. The wrap was made of raw cacao, dates, avocado, vanilla, sea salt. The filling was fresh coconut meat, vanilla, cashews, sea salt, and maple syrup and then topped with banana slices and strawberries…oh and drizzled it with a chocolate sauce.
Now that hit the spot!
Today’s workout
After feeling energized from our breakfast, we decided to go for a run today. We took a break from running to help our body learn to take energy from fat not carbs, so today we had no real expectations. We managed to run/walk 5 miles. Both felt great until we reached our last mile home…our legs were tired. We did our walk/run routine to ease back into running, and we both noticed our speed was quicker when we were running so we were excited about that!!!
Then we did about 30 minutes of yoga after our run. We notice that yoga really helps keep us lose, which is great for running.
Post-workout meal: Juice
Today’s juice we made it a little bigger than normal due to the lack of water we drank this morning (we slept in, what can I say). It was full of cucumber, celery, kale, ginger, arugula, apples, and watermelon (got fresh a farmer yesterday).
The juice was very refreshing!
Next meal of the day was another chocolate haven! It was our leftover coconut chocolate pudding that we have been snacking on all week. You know it is a great day when you get to have chocolate twice : )
Dinner tonight is something Lori is creating: Guacamole with our sunflower kale chips.
Guacamole:
2 avocados
1/4 cup finely chopped red onion
1/4 cup finely chopped white onion (Lori loves onions!)
1 tbsp lime zest
3 tbsp lime juice
2 tbsp hemp seeds
1/4 cup fresh cilantro (lightly packed)
pinch sea salt
Mash together in a large bowl with a fork.

While I am writing this post Lori is complaining to me that she is hot. She is cooking food for her boyfriend for the week. haha she sure does not miss cooking!
And we are having a small side salad to go along side out guacamole and chips and a glass of wine!

YUM!
There is something so peaceful about devouring a bowl of fresh guacamole with “healthy” chips!

Dinner is served
