Finally pancake Sunday

Hey everyone

How was everyone’s weekend?? We had a long one over here, but worth it ; ) Did anyone watch the Oscars?? We took the night off from work and enjoyed some wine and good entertainment. We just enjoy the awards shows…all the pretty dresses.

We enjoyed some good eats over the weekend…featuring some new recipes (which we will share ; ) )

Enjoyed a very large breakfast Saturday morning before we headed to the farmers market.

IMG_5221Buckwheat apple porridge. We have not had this in sooo long, it used to be our breakfast every Saturday morning last year before our Saturday markets. It is so simple and very filling, which is what we need for our long market days.

Sunday morning we finally made some raw pancakes in honor of Heather’s Pancake Sundays.

IMG_5256These were not our best ones, it is pretty much just mashed up bananas. But we will share the recipe if you all want.

IMG_5262Yesterday we did our longest run yet since the marathon in January. Honestly we really have only ran 3 other times since the race, we just have not been wanting to run. We have been enjoying other forms of exercise.

Our goal was a 30 minute run, but it turned into a 9o minute run. We went up to the local park and got on a trail and did not know how long it was….but that is okay it was 60 degrees out and sunny!! We will take it!!

We have been testing out new workout snacks for our cookbook, yep having a whole chapter dedicated to what we eat for fuel and recovery ; )

And then dinner and dessert were both new recipes!!

And dessert took 2 trials. We have been wanting to make raw carrot cake since forever!! There are tons of recipes out there, so we of course wanted to create our own. We wanted to make it out of carrot pulp, so the first attempt failed….ended up in the trash compost. Second was beyond perfect….way better than we were planning, it honestly tasted like real carrot cake!!!!

Not only was it raw but free of gluten, eggs, dairy, peanuts, corn, soy, and NUTS!!!

IMG_5345We had seconds…it was that good. I think I could eat this every night. It was beyond words!!  I know you all are thinking, do we plan to share the recipe….YES!!! We will expose this tasty easy to make dessert sometime this week ; )

Not a bad way to end the weekend.

We bought this the other day at the store because our older sister loves it, so we had to try for ourself.

Verdict?

Different. It was very sweet compared to other coconut water, even though it claims to be unsweetened.

IMG_5275Maybe it is their types of coconuts? Or maybe it was due to being chilled and out of can? Who knows but it was bothering me that it was so sweet, a mental thing I guess.  But we drank it all. Not sure if I would purchase it again. Just maybe when I need something cold to drink. Lori did not mind it too much, enjoyed having something different.

It’s all about the Kraut

Happy Friday friends!

Where did the month of February go?? Glad to hear everyone loves to eat food.

Anyways today we are sharing some more videos of one of our favorite foods…Sauerkraut!

We have talked about making kraut a few times, here and here.We love our fermented foods.

There are so many ways to eat kraut….and reap the benefits of adding healthy, low calorie, full of healthy bacteria to keep your body’s gut balanced.

All we did was take our sauerkraut blend in blender with some spices and tahini to make an easy and poured over some kelp noodles. And add in some arugula!  Easy and delicious :) We just love pretty much anything with kelp noodles ;)

I have been up for 2 hours and have done nothing besides writing this long and useful post!!! Don’t you just love Sundays!! An official excuse to be lazy, right??

Anyways our friend Averie asked us to share our favorite things. It has been a topic we wanted to do just never got around to it, so when she mentioned it we thought now is a great time to share.

Twin’s Favorite Things – again these are from our own experiences you can make your own call

How we go about getting our ingredients. We do most of our shopping online although if we are low on certain ingredient and we know a local health food store around us sells it we will just by it from them. We try to buy in bulk as well because in the long run it saves you time and money.

1) Coconut Oil -   best quality and tasting  - Artisana Premier Organics coconut oil and coconut butter

best for your money – one gallon tub from Sun Foods

best convenient – sold in most health food stores Nutiva

Other high quality coconut oil brands we have been enjoying Vivapura and Virgin Coconut oil De Coco Creme

2) Best online stores to shop: how we shop the most are Natural Zing, Amazon, Navitas Naturals, and Mountain Rose Herbs. For specialty items Raw Food World and Sun Food.

What we have been know to buy at Natural Zing: MSM powder, kelp noodles, coconut oil, tahini, maca, lucuma, yacon syrup, chia seeds, spirulina, raw cacao powder, raw cacao nibs, camu camu, and nuts and seeds, hemp seeds

Amazon: coconut water, Artisana and Navitas Natural brand products, dehydrator, vitamix, spiralizer, mandoline, nutritional yeast

Navitas Naturals: chia seeds, raw cacao, sprouted flax meal, yacon syrup, mesquite, maca, hemp seeds, lucuma and stevia

Mountain Rose Herbs: cinnamon, turmeric, sea salt, maca, chia seeds, chorella, spirulina, dulse flakes, any spice really, green tea (for making our kombucha tea)

3) Hemp products: Best overall  Manitoba Harvest (can be pricey)

Best second choice Nutiva

Other overall decent hemp protein Ruth’s Hemp (we get from  Natural Zing) or buying in bulk from Whole foods or Mountain Rose Herbs

4) Stevia – powder we like the best is Sweet Leaf the packets (which you can find in most heath food stores)

Second best is – KAL Pure Stevia Extract liquid (we get from health food stores)

Third best is – Stevia powder from Navitas Naturals (this is an acquired taste)

We find to like most Stevia products but we prefer liquid forms of it the best. We know for some Stevia is hard to get used to though we have been using if for over 3 years and we hardly notice it anymore. To us it is worth the after taste or getting used to factor from it having no calories and for us it is truly the best sugar substitute. We use it a lot in our bakery and personally!

5) Other random ingredients we use and where to find them

Nutritional yeast – most health food stores sell it (RedStar is our favorite)and Amazon

Irish Moss and Sunflower lecithin – I mentioned this yesterday

Florida Crystals Organic Sugar – we use for making kombucha and water kefirs (most health food stores sell this brand)

Native Forest Unsweetened Classic coconut milk – again most health food stores should sell this

Living Harvest – hemp milk (unsweetened)

Pacific Foods – Almond milk (unsweetened) and Hazelnut milk, and Rice milk

Again how we go about purchasing these items varies every time we need something. Some times it comes down to money, convenience or brand loyalty. It really all depends what we are shopping for and what we are low on. It also comes down to personal preference and money.

This great lady also has great tips on buying in bulk. Also we know because we have done it that most health food stores allow you to buy in bulk (cases) like Whole Foods, Earth Fare, and any local health food store in your area. Just go and ask the customer service area and they should be able to help you out. Buying in bulk is great especially for a family with lots of mouths to feed! Mountain Rose Herbs again is a great place to do this as well because they offer bulk discounts to everyone and their products are organic :)

We hope this list of our favorites helps you along your journey of finding great healthy additions to your lifestyle like is has ours! Please let us know if you have any specific questions.

Back to our dinner:

Kabocha Kelp Noodles

We blended in our roasted Kabocha from earlier this week add in some salt, leftover sage that we roasted with the squash and some water. Threw it all into the blender and blended till creamy though ours we kept on the thick side :)

Than created a ‘green’ sauce to over the top, you know us with our greens! Green sauce was a blend of tahini, yacon syrup, apple cider vinegar, parsley, shallot, sunflower lecithin and water! Blend till creamy. And pour on top of kelp noodles and kabocha squash mixture.

IMG_3832Amazing! We think all squash lovers would approve of this sauce :) A great way to end a Saturday night. One reason why we created this dish was to show a customer at the farmers market yesterday morning what else to do with squash. She mentioned she does not know what else to do with winter squashes and that’s when we thought of using it as pasta ‘tomato’ sauce! Although we feel this would work with any veggie dish!

We got lots of goodies lined up today for the big game! Super bowl day! We can’t wait to show you all what we come up with tomorrow ;)

Easy creamy hemp sauce remake

Hey friends,

Here it is Monday again hopefully everyone had a wonderful and safe weekend!

The twins sure did – we stayed inside ALL weekend long!! We did manage to get lots of work done and watched some movies mainly the Bourne Trilogy! We are in love ;)

Our eats for the weekend were filled with delicious green smoothies, fermented veggies, and a yummy dessert (more on that later)

We tried a new vegetable combination for our fermented veggies this week.

But last night’s dinner we took Gena’s creamy hemp basil sauce and put our little twist on it ;)

Pure2Raw Remake of Gena’s Recipe of Creamy Hemp Basil Sauce

  • 1/2 cup hemp seeds
  • 1/2 cup water
  • 4 tsp lime juice
  • 1/4 tsp sea salt
  • 1 date (used medjool)
  • 1/4 cup fresh basil
  • small handful of fresh parsley

Put all the ingredients into a blender and blend till smooth!

We poured our creamy hemp sauce over our favorite noodles – kelp!

Ended up eating our creamy hemp kelp noodles with 2 slices of our raw onion flatbread :)

Jan 2010 pics more 866 Gena your recipe is brilliant and easy. Love the nutty flavor from the hemp seeds and the creaminess they provide this sauce. The hint of basil helps round out the whole dish with a splash of sweetness from the date. Heavenly!!! :)

What pasta and cheez for lunch?

Hey friends,

I hope you all get a chance to make the key lime pudding and enjoy it as much as we do :) Though you do have to love limes ;)

As you can tell we have updated our blog look. We wanted it to more simple and easy to read. (if you are in google reader you will have to go to our blog to see our new look and let us know what you think) We like it! It is simple just the way we like things – clean and simple. Thanks for the great feedback on twitter.

We received a lovely package in the mail the other day. The great people over at Vega and Sequel Naturals asked us if we would like Brendan’s new book to review it. We said of course!!! We are huge fan of his first book and we are always in the market to learn new things :)

Yesterday our day started with green smoothie which kept us full till lunch time :) Love that!

Lunch was phenomenal! Totally hit the spot for the both of us! We created a new sauce for our lucky gift of health basket customers and had to try it out with kelp noodles! Total success!!!! We think everyone is going to love it :)

We mixed in some of our raw fermented veggies into the mix to make a glorious lunch! Great thing about kelp noodles is that the are perfect for those of you who are “pasta” lovers but the best part is that they are extremely low in calories and are so GOOD FOR YOU! And you don’t feel bloated, heavy, tired, or just blah after eating them :) compared to white pasta!

Workout:

1 hour power yoga class at Blue Lotus Yoga Studio.

Must admit we were both pretty nervous for this class though we did a Vinyasa class last week and loved it! The teacher was great and the class kicked our butts. We did lots of poses that we have never really done before that really showed us were we need work ;)

Left the class feeling awake and OPEN! We did mostly heart opening and hip opening poses. Fantastic!

We hope to continue our yoga journey. We are not sure what class or when we will do it again, but we hope we can make it work with our budget :)

Dinner was a simple coconut kefir shake with cilantro, maca, stevia, carob and sunflower lecithin.

New Christmas Gift a Success

Good morning!

Glad to see that everyone is enjoying our green smoothies and the encouragement for our marathon :)

As we mentioned yesterday how great we felt with our 6 mile run. When we got back we whipped up a simple yet satisfying post workout shake filled with coconut water, little coconut oil, mint, and yacon syrup! (sorry so picture)

About 15 minutes later we were still a tad hungry so we each enjoyed one slice of our swiss chard hemp seed onion flatbread! Perfect!

Dinner was kelp noodles with roasted veggies (that we were leftovers from a few days ago) as our sauce.

We also added some watercress, raw onions, olive oil and apple cider vinegar to our kelp noodle dish. Again simple and perfect!

And than a little bit later in the evening we got a little hungry again so we made a simple sauerkraut with avocado dish topped with spirulina and lime zest and juice. Again sorry no picture. It might have scared all of you because the spirulina made it a real dark green/black color when all mixed together. So we spared all of you from seeing a not so pretty dish but absolutely delicious!  ;) We are totally loving our raw sauerkraut with just about anything.

On a different note we mentioned on twitter yesterday that we were trying out a Christmas gift from the older sister… new headphones! They are Nike Vapor headphones.

The Nike Vapor Headphones

One thing that is so great about these headphone is that they are flexible! The earclips can be adjusted at three different points.

And the cord length can also be adjusted through an extender which is great because I like my cords on the shorter side. My previous earphones had a mile long tremendously long cord which I hated because it always got in the way.

All the pivoting, extending, twisting, and moving parts ensure a good fit for all users.

Twins Overall Product Review: 2 thumbs up!

We feel these are a great buy and addition to anyone’s workout. The sound quality of the Nike Vapors were great. I heard every song loud and clear. Also we loved how they REALLY STAYED IN PLACE!  :) There was so ear phones falling off the ear action going on like previous headsets have done!

We are very happy with these so far, though we have only used them once. But do plan on wearing them for our marathon this weekend.

Marathon Preparation

Hello friends,

Well it is one week till our marathon at Disney! The final countdown is on!

The nerves are kicking in for us both. But we are also excited! :)

We plan on documenting everything we eat over this week before hand to show you all how high raw foodist eat before a marathon.

We also wanted to share with you all a new book that we are currently reading called “The Patient Heal Thyself” by Jordan S. Rubin. This book was given to Michelle and I from Kim our colon therapist. It is amazing how you meet certain people in our life that really help you and Kim is one of those people. :) Thanks Kim there are no words to describe how grateful we are that we met you!

Isn’t amazing how certain people come into and out of your lives and you always wonder why you met them? That it takes you awhile to finally realize what that ‘life lesson’ or guidance that person may have taught you? Has that ever happened to you?

We have some big news to announce about this upcoming marathon. As many of you know we typically run marathons with our older sisters. Well since the oldest is pregnant she is no longer available to do this and with Jen, our second oldest sister, has been having some very serious health issues. Therefore, she is not going to be able to run in the marathon this year. Looks like it is going to be the twins alone this time :(

Going along with our sister having health issues is becoming a very serious concern for Michelle and I both because our sister does not know what is really wrong with her. And after talking with Kim she mentioned this book because she felt that this guy’s story is very similar to what our sister is going through! We are very excited to read it and hopefully get some insight to help our sister! Sorry we can’t go into further detail of our sister’s health issues but once we figure it all out we hope to share more of her story with you all.

Ok back to our marathon preparation.

Our diet is pretty much going to be the same as we typically have been eating.  We aim to show you everything that us, raw foodies, eat or drink in order to prepare our bodies for our marathon.

Today we started our day with yet another delicious green smoothie

It made a little bit extra so we had to put some in a smaller glass! This smoothie was filled with apples, swiss chard, cinnamon, cardamom, sea salt, coconut oil, msm powder, and turmeric.

 

Than our workout for today was our last 6 mile run before the race. Our pre-work out snack was a new creation we made.

We were quite pleased with the final results. Just a few more minor tweaking to the recipe and we will have a great pre-workout snack! YAY! One that is loaded with important nutrients essential for getting great workout results.

Perfect before our run! Gave us both the energy we needed. We both actually felt great during our run which is a first. Because typically always one of us has something hurting like our stomach or back! But not this time. We both actually enjoyed our run! What a great way to feel before our marathon.

The joy of health food stores

Hello everyone,

Here is to another week…for us vacation : ) We have not been up to anything special, sorry we live boring lives, just usually in the kitchen making goodies for the family to enjoy.

We made a raw key lime cheesecake for our dad because he loves key lime plus he pulled a bunch of fresh limes of his lime tree. So we thought it would be nice to make him something with them, plus nothing beats fresh limes right off the tree.

We also have been making a lot of yummy green smoothies for everyone to be enjoying while we are home. Everyone wants a Vita-mix for Christmas  :)   We will be posting some of these yummy green smoothies soon.

But we wanted to share with your today that we love health food stores. Even in lovely small Fort Myers there is a small health food store that we are able to go and buy things like nutritional yeast, raw nuts and seeds, agave, and most importanly they offer Kombucha teas and Raw Sauerkraut!!! Yes!! Sorry these little things excite us, we just love going to all types of grocery stores : )

We just think it is so exciting that more and more health food stores are opening up in all areas of the world. Everyone deserves to shop for there favorite things conveniently in their own home town. I know there are a lot of online stores, but sometimes it is fun to be able to go to a store and actually buy things you can eat : ) Do not forget to support your small local stores!!

Last night we made a delicious raw dinner featuring another one of our favorites: KELP NOODLES

Everyone was curious about this, so we sample dand all seemed to like it. Or so they say, LOL> The sauce was real simple: zucchini, tahini, nutritional yeast, olive oil, and basil.

Tonight’s dinner we are making a raw tostada. Lori and I have made a few of these before, plus I made one at school. So I wanted to make one for the family, although the “tortilla” is a new recipe,  so we will see.

Have a great evening…we get our Christmas tree tonight, so we are getting all the Christmas decorations out!  And for all of you who have contacted us we wanted to let you know we have not forgotten just have not really been on the computer much, but we will get caught up this week. Thanks!

Raw spaghetti and meatballs anyone?

Good evening everyone

Hope you all had a good Monday.

As we mentioned earlier we were trying a new yoga today.

Our verdict?

We enjoyed it. It was different and different is good!! It really helped us focus on posture and breathing, which sometimes we over look, especially being new to yoga.

Both had good sessions at our 4th colonic appointment, we feel we are the verge of a break through…getting to the other side is not always easy. In the past we would go go 2 or 3 times, so we are proud of how much we have done so far. And we are both starting to feel better…it is amazing how much matter junk is inside.

Okay on to some fun things ; ) We plan on giving a lot recipes over these next few weeks. I guess our appetite is coming back!

Today’s Uncooking With the Twins: Raw Spaghetti and meatballs

Homemade Raw Tomato Sauce

  • 4 tomatoes
  • about 1 cup sun dried tomatoes (soak in water)
  • 1 garlic
  • 1 tsp salt
  • 1 spring of fresh rosemary
  • 1/4 tsp sage
  • 1 tsp basil

Place ingredients into blender and puree!  *Also you made add some agave too, that would be yummy : )

CIMG6467The tahini was added at the end because when we lasted it, felt like it needed something, so we were inspired by our friend Heather…tahini was the answer!

Which then inspired us to make:

Raw Alfredo Sauce

  • 2 tbsp tahini
  • about 2 tbsp olive oil
  • about 2- 3 tbsp nutritional yeast

I really just through this all in a little food processor, so the exact measurements might be a little off!

Raw Meatballs

  • heaping 1/4 cup brazil nuts, soaked or unsoaked
  • 1/3 cup shitake mushrooms, sliced
  • 1 garlic
  • 1 juice of lime
  • pinch salt
  • 2 tsp olive oil
  • 1 tbsp flaxmeal
  • 1 1/4 tsp cumin
  • 1/2 tsp chili powder

This recipe is so flexible, you can use a mix of nuts, add different seasonings, add soy sauce if you eat that, just have fun!! You could even add leftover pulp from a juice.

Mix the ingredients in a small food processor till combined.

Then scoop and form into balls.

dehydrate for 1-2 hours, but this could be optional!

Take them out of dehydrator and they are ready to go. And here is the final dish all plated together with the kelp noodles

Who wants some??? Much better than the real thing… I must say! Tummy would agree! So easy on the tummy no bloating or “fullness overload” :)   Go ahead and have some seconds.

Now while we were making ourselves this yummy meal, Lori was making her boyfriend an old classic vegan meatballs that we used to eat all the time (before we converted to raw) made out of lentils. And since we are in such good spirit this evening we are sharing that recipe too!!

Vegan Meatballs

Ingredients

  • 1 cup red or green lentils (note if use red they will get mushy and lose their lentil look)
  • 1 1/2 cups veggie broth or water
  • 1/4 cup finely chopped onion
  • 1-2 garlic gloves
  • 1 tbsp olive oil
  • 4 oz mushrooms of your choice, chopped
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/2 nutritional yeast
  • 1/2  cup ground flax seeds
  • about 2-4 tbsp gluten free flour, like rice, sorghum or quinoa
  • pinch salt and pepper

Directions:

In a large pot on stove top, place your lentils, veggie stock or water, onions and garlic. And bring to a boil.

Than reduce heat and let simmer for about 30-40 minutes. (depending on your type of lentils… red takes less time to cook about 30 minutes whereas green take more like 40 minutes)

Once done all liquid is absorbed

CIMG6475Place about half the lentil mixture in a food processor add remaining ingredients: olive oil, mushrooms, cumin, oregano, nutritional yeast, salt, pepper, and ground flax seeds (flax meal) and pulse till combined.

Than add the remaining lentil mixture and pulse just a few more times. We like to leave a little bit of the lentil whole, not all mushy.

CIMG6493Place mixture into a large bowl and stir in some of the gluten free flour. You want to get the mixture to stick/ hold together and form into balls. Roll them in some gluten free flour as well… this will help them get crispy on the outside. ** Though we rolled ours in a little too much flour

Place them in a warm skillet with some oil. We used coconut oil

And continue to watch them and turn them on their sides so you get the crispy outside on all sides.

And that is it. They will be a little moist in the inside but crispy outside ** Note we made ours a little too big. They do much better when you make them small more like bite-size.

Threw in some more slices of the local mushrooms in the pasta. And there you have it folks one raw pasta meatball meal and one gluten free vegan pasta meatball meal! Dinner is served ;)

Happy Hump Day everyone

Great news we both woke up with NO SORENESS from our 13 mile run yesterday :)   Our legs felt great we both said that we could run today if we really wanted to! Guess our recovery time is speeding up due to all the alkaline foods we are eating.  Great news for our marathon training. Hopefully we can really start pushing ourselves on our runs.

We also wanted to say thanks to all those great comments about out long post yesterday…. glad to see everyone like it and learned something!

Ok… we are totally obsessed in love with kelp noodles. As you can tell this is our second night having them this week… and to warn you — they might appear again ;)

We started our day with a typically large green smoothie that we ended up drinking throughout the morning. Lunch was a quick avocado lime pudding because we had a few errands to do. Our late lunch was trying out a new juice and smoothie spot in Carrboro. Sorry we forgot to take pictures we were in a rush to meet a client. But we plan to go back and will take pictures :) We both got two smoothies to hold us while we finished our errands.

Got back and squeezed in a quick mini workout session. We did about 45 minutes of leg exercises, kick boxing and some yoga! We just put on some good music and knocked out the workout. Short and sweet!

Our little workout sure made us both hungry!

Semi Raw Thai Coconut Noodles

Ingredients:

  • IMG_10471/2 cup  coconut milk (we use the light version not because of calories but because we prefer the taste better)
  • 1 lemongrass (about 2 -3 inches), chopped
  • 1 can artichokes (although we used about half), chopped
  • 1 bag kelp noodles*
  • 1-2 tbsp fresh grated ginger
  • 2 large handfuls of fresh basil (about 1/2 cup)
  • 2 large handful of fresh cilantro (about 1/2 cup)
  • 1 head of bok choy, rinsed, chopped
  • 2 pinches sea salt
  • black sesame for garnish
  • 1-2 tbsp sesame oil (we used non toasted but toasted would be fine)

*You can sub zucchini noodles which we each too, although we love kelp noodles because of the nutrition content but also because they are already to go. No special machine, no extra cleaning…just rinse and cut!

Kelp noodles are mineral rich, low in carbs, calories, and fat-free, free of all allergens! We also love it because of its neutral taste, so you can really have fun with the sauces : )

Directions:

Rinse and cut kelp noodles

Cut up bok choy, cilantro, basil, lemongrass, and artichokes. Place in large bowl.

Toss in ginger and coconut milk.

We really enjoyed this dish. ALthough to some it may have been a little plain, so if you like heat please add some. here are some suggestions:

Add cayenne, paprika, red pepper flakes, garlic, onions, or jalapeno peppers…whatever you are in the mood for just have fun!!
