Theme week: Holiday meals

Good evening friends,

Well I would love to say that today was a great day… I mean the sun was finally out, got a good workout in, got orders done and things ready for the week. Though, I had a break down again… who am I kidding I have one everyday. My depression is still lingering around. The funny thing is that it feels like Michelle and I have switched roles. Now I am the one struggling to be happy and she is doing her best to cheer me up!

Why the break downs: well I thought my skin was finally clearing up but these past two days it seems to have gotten worse again. :( I am not sure what I did different with my diet or exercise to have led me here again. Grrrr. Anyways sorry for my rant. I had to get it off my chest… they say that is the best thing to do.

Ok… enough of the emotional stuff.

Twins Workout:

6 mile run (finished in 57 minutes)

45 minutes of power vinyasa flow from yogadownload

Twins Eats:

Bk- green smoothie

Pre-workout snack- our raw chocolate coffee (water, carob, lucuma, mesquite, cacao, dates, coconut oil)

Post-workout snack- hemp protein shake with chorella, maca, and stevia

Lunch: raw sauerkraut avocado sandwich

Now time for our theme week day one of holiday meals!

Today Michelle and I got to play in the kitchen with some holiday recipes that we used to eat cooked and wanted to see if we could re-create them raw. And here is what we created:

Pure2Raw Recipe: Raw roasted veggies

Ingredients:

  • 1 beet, skinned
  • half white onion
  • 2 garlics
  • 1 carrot, skinned
  • 1 acorn squash
  • 3-4 tbsp olive oil
  • 1 tsp dried rosemary
  • 1/2 tsp thyme
  • 1/2 tsp sage
  • 1 tsp salt

Directions:

Clean all veggies and gather all other ingredients

Time to start cutting all the veggies

Thinly slice carrots

Next thinly slice beets (don’t you just love our beets stain everything)

Finishing slicing the remaining of veggies and then toss them all into a bowl

Than add your olive oil, garlic, and spices. Toss to coat!

Take your veggie mixture and spread onto dehydrator tray

Let these veggies dehydrate till soft. We did our overnight. Remember they will shrink in size!

And that is it for that recipe. Once they get to your desired texture they are ready to go. Place on a plate and enjoy!

Pure2Raw Recipe: Second up –Raw creamy Spinach

Ingredients:

  • about 1 lb of spinach
  • 4 tbsp hemp milk or any non- dairy milk of your choice
  • 6 tbsp hemp seeds
  • 1 small zucchini, lightly skinned
  • 1 tbsp coconut butter
  • 2 tbsp nutritional yeast
  • 1 tsp lemon juice, more for wilting down spinach
  • 1 tsp salt
  • 1 garlic
  • 1 tsp dried basil
  • pinch nutmeg

Directions:

Place spinach in large bowl.

Gather remaining ingredients and grab blender.

Place hemp milk – we like to use Living harvest unsweetened vanilla

and hemp seeds into blender.

And blend together for a few seconds.

Next add in your garlic ( now you can peel off the skin of garlic) We used our garlic press to do the work.

We lightly skinned ours ( we did this because we did not want the sauce to turn green)

Blend till nice and creamy

And volia you have youself a delicious creamy dressing for your spinach!

Now all you have to do is start massaging the spinach with your hands till it starts to wilt down. You can add a little bit more lemon juice to help.

And that is it. Time to plate up! We topped ours with a little bit more hemp seeds.

If you are looking for more of the cooked route here is what I recommend: roast the veggies in your oven at 350 for about 30 minutes or till tender. And for the spinach you can sauté the spinach up some before adding the sauce.

Homemade kombucha and coconut yogurt

Happy Friday Friends,

Last nights dinner was a new recipe idea that we thought of last minute. Here is the final results:

After staring at our dinner plates we realized it just needed something else….

Creamy wilted down spinach with avocado, lime juice, and nutritional yeast!

The beets on the creamy spinach salad are roasted. This is the one ‘cooked’ food we decided to have today. And yes when we cooked food these days it has been at our last meal “dinner”. By eating all raw during the day and come cooked at night gives us the energy we need to perform our best during the day.

Don’t worry we still had room for dessert. I guess our run early in the day got our metabolisms going.

Our dessert cocktail

This little dessert cocktail was rockin!! We used our clean un-cleaned leftover coconut yogurt blender to mix up a little something special. Again we just threw ingredients into the blender and volia…. perfection! *More on the coconut yogurt recipe later.

Twins Dessert Cocktail:

  • 2 cups coconut water
  • about 1 tbsp carob powder
  • 1 packet stevia
  • very small drop of mint extract (optional) we just love mint!
  • - leftover coconut yogurt (what was left inside from trying to clean out our vita-mix blender) * if had yogurt already made than I would suggest putting about 1-2 tbsp worth of yogurt into blender.

Blend and enjoy!

Our  Friday morning started off with some warm lemon water followed by our first cup of our homemade Kombucha. * And we try to recycle as much as we can in our house so you can see our re-used Kombucha glass bottles that we bought in the store. So clever… like no one else has already thought of this before ;)

Next was finally breakfast…. can you guess what it is?

Yep Green smoothie. This was filled with apples, water, lemon zest and juice, half banana, 2 bunches of watercress. Key is to blend till smooth. Than drink with a must have item— glass straw! :)

Ok… now time for coconut yogurt making 101 lesson.

How to make coconut yogurt  101:

* this is our second time making it… we have tried a few new things to make it better than the last one and still nut free. If you missed our first time making it you can check it out here. This is Michelle trying to recreate and modify the cashew coconut yogurt she learned at school.

Tools needed: blender, measuring cups, spoons and/or spatula

Ingredients:

  • 4 cups coconut meat (it took about 8 coconuts to get this amount of meat)
  • 1 cup coconut water
  • 1/4 cup lucuma
  • 1 tbsp vanilla
  • 1 tsp pro-biotic powder (we used powder from opening up capsules)

Place all in blender

This is how we use pill form probiotic in our yogurt….our drugs HAHA ;)

Blend in blender till smooth.

Now time to pour into bowl to let sit overnight and cover lightly with a towel in warm place.

Now we just took a few bites of it to see if it has improved since our first attempt…. much better. Love making progress in the kitchen.

What to do with your yogurt?

Use it in smoothies, granola/cereal, or use it as ’sour cream’ or ‘mayo’ in more savory dishes, the choices are endless…Here is what we did

In honor of all the other bloggies who have been enjoying lost of pumpkin creations. We took some roasted pumpkin, pureed it and stirred it with our yogurt.

We stirred in chia seeds and drizzled with yacon  syrup (or any favorite sweetener) We like yacon because it is low glycemic and reminds us of molasses. : )

Don’t worry about the coconut kefir…. it is almost done fermenting. We will show more of that tomorrow. I know you are all so excited… :)

Re-cap My first dinner at 105 degrees

Good morning everyone,

I hope everyone is having a great morning. I am feeling well – despite being up for almost 24 hours yesterday!!!

After lunch at 105 degrees Michelle took me back to the hotel to get  my things unpacked.  And than it was time for some yoga to help stretch me out from being in a plane all morning.

Here are the twins ready for some yoga: (Loving the full length mirrors – I need one in my house)

Michelle took me to a wonderful yoga class yesterday evening. I sure worked up a great sweat : ) It felt so great to move, stretch, and relax my mind from traveling. I felt amazing after the class, thanks Laura, it was a pleasure meeting you and the rest the yogini’s !! Laura, you are an amazing yoga instructor!! I highly recommend any Oklahoma native to go by her studio and give it a go!

Then I was like okay wants for dinner?? haha 105 degrees silly…the only place in town I can eat at : )

Upon arriving to the restaurant it was still busy when we arrived around 8pm, which is awesome. It makes me so happy and all warm and fuzzy on the inside to see people giving Raw Foods a chance! I really studied the menu, everything sounded yummy, so hard to decide on what to eat?  Plus Michelle gave me her feedback on things she has tried and liked. But I ended up venturing out and I tried something new, raw beet ravioli. I never had raw beet ravioli (I have been wanting to make some for myself for awhile now) so I was stoked!

Dinner was served, but first we got ourselves a nice glass bottle of wine

We split the meals, both were delicious. I found the spicy noodles to be a bit spicy for my taste buds (though I kept going back for more) Michelle devoured it. So it is perfect for people who like a little heat : ) The ravioli was delightful. We both love beets : ) The cheese filling was perfect, just the right amount that is was not too overwhelming. It is so nice not to feel all sluggish after eating “ravioli” :)

The whole atmosphere of the restaurant is alluring. I must say it has such a lovely setting and decor. I love how they made being eco-friendly sexy! (Don’t you just love their bamboo tables…. I sure do. I have a couple of bamboo cutting boards back home and love them)

Ok now back to the food! We both loved the creamy spinach that we ordered another one plus more kale chips…the ones for lunch were so good I had to get more. They are so addicting : )

I have to say these were all PHENOMENAL — I loved them all. If I had to pick one dessert that was over the top than it would be the pistachio nougatine. Michelle’s favorite was the tiramisu.

I also got to see and meet Matthew again as well as JD, Meredith, and Don! It was a pleasure meeting all of you :) Just as we were finishing up, Gina was also able to join us for a glass of wine!! I really enjoyed talking with her, she is an amazing person.

I slept well and was ready to hit the gym with the sis this morning. We both enjoyed our typical pre-workout bar before heading out. We did an up-hill walk for 60 minutes followed by a few leg exercises and push-ups. When we got back to the hotel Michelle made us a simple hemp protein shake with a few additions to it like maca, bee pollen and sun is shining. I must say I miss my Vitamix. I know Michelle does too!!!

Now time to get ready for the day. It is Michelle’s last day of class. And she is getting really nervous about her final dishes to plate up tonight for some very special guest!!! She is pacing behind me while I write this…. calm down sis!
