Tortillas for dinner

Hello everyone,

It is really Monday again, seriously where does the weekend go?

Though since we really never get a day off from work …everyday is the same to us ;) We never get weekends!

Michelle and I did get to eat some really fun and of course interesting food over the weekend!

We have been having some juices and green smoothies of course though treated ourselves to a fun and out of this world dinner on Saturday night.

Seriously craving this dinner again – a-m-a-z-i-n-g!

We like to call it our open face tortilla! Or a.k.a tostada – Twins style!  We have made one before here.

And have made some before for an event we did last year- huge hit!

We love our tostada’s. Not sure why we do not make them more. Umm… that’s going to change!

The base is a coconut tahini wrapper we made topped with sauerkraut, fresh cilantro and pureed up roasted veggies (our sauce)!

Definitely plan on making this dish again :) Quick, easy, and full of flavor. It really felt like we were eating a tortilla it was heavenly!!!!  Seriously reminded us of a typical white tortilla that you can get from any Mexican restaurant but this one only had two ingredients!!!!!! Love that. Great dinner that was easy on our stomachs to digest due from the sauerkraut and simple, fresh ingredients!

Last nights dinner was another success… though it was a in form of a monstrous salad.

Dessert was even better – we split our pecan banana cupcake with caramel drizzle. Love our raw desserts – full of flavor that splitting this was just enough to satisfy us both :)

Sweet and savory tart

Happy Wednesday Friends :)

Love all the less meat protein sources support from you all! Lori and I are still trying to find our balance with everything though each week we feel we are understanding our bodies better :)

Lately we have been enjoying some delicious eats. We attempted to re-create the Little Debbie oatmeal creme pies (one of our childhood favorites) and this is what we came up with: our raw  ‘oatmeal’ kreme cookies

We have been enjoying some fresh vegetable juices in the morning

feb 2010 pure2raw blog 423Great way to start the day! So far our tummies have been enjoying our fresh juices again. By having such a light breakfast has been nice both with our ‘eliminations’ and giving us energy for the day!

Been enjoying lots of our homemade sauerkrauts :) Made a bunch of it this past weekend ;)

feb 2010 pure2raw blog 400 This one we top with ground hemp seeds (which is another new thing we are trying – grinding all our seeds into flour form before eating, this helps with inflamed and sensitive stomachs by having things in flour form not whole seeds)

Made a glorious savory mini tart as part of dinner last night along with one of pure2raw onion flatbreads topped with more sauerkraut!!!

Secret Ingredients

Hey luvs

Last night as we sipped on some lovely hot cocoa and gobbled up enjoyed some of our Twin Cakes gluten free vegan chocolate chip cookies (and sent some cookie love via Twitter to our friends, Betty and Lauren), as we were getting caught up on with some of our favorite blog’s and found some amazing inspiration. One was from this lovely lady.

So while we stood in the freezing cold weather (plus some snow flurries) this morning at our farmers market we thought about all the things we could make. We love Snickerdoodles. The perfect blend of cinnamon and sugar. We made some gluten free vegan snickerdoodle cookies before last year as featured item at our farmers markets, but have not done anything since. So we decided we will create something raw….surprise right ; ) Thanks Katie, you got us thinking now!

First we had lovely breakfast:

The picture just does not do this breakfast justice…the color green was so pretty!! And the taste was amazing ; ) Oh and on a side note, we both got better sleep last night and did not feel tired at all this morning. So we were excited about that.

Well due to having energy, we got in the kitchen as soon as we got back from the market. And made two different snickerdoodle desserts. They are in the dehydrator, so hopefully one of them turns out.  Hopefully we can make Katie proud ; )

Our layered chocolate cake.

We received some questions about two ingredients we used.

Pure2raw Secret Ingredients:

Sunflower lecithin. Lecithin is an emulsifier, which is the main reason we use it in a lot of our raw recipes. The more common lecithin most people and companies use is made from soy (soy lecithin), but since we try to avoid soy when possible we found this wonderful product from the Raw Food World. Thanks so much to Matt for finding this product, we love it!!

We absolutely love our sunflower lecithin for many reasons, but as I mentioned mainly for the binding property. I will admit it took some time getting used to the consistency and flavor, but now I seem to put it in everything somethings. I actually miss it if I do not put it into my smoothies or puddings. Yep our breakfast above had some of it stirred in!! See how thick and creamy it was. Delicious. Sunflower lecithin just creates this amazing texture and feel in your mouth.

Next up is Irish Moss

We have played around with Irish moss before. We could not find much good information about it out there, so we just kept playing around with it. Now it is NOT Irish moss powder!! There is a difference, and we have tried the powder and NO LUCK!! So please save yourself the time and money and do not buy the powder. It does not work the same…or at least to us it did not work as good as the real thing!

Then lucky for us, Michelle got to learn more about it when she went to 105 degrees.  The Irish moss used in school was from Maine where Matthew Kenney lives. So let me tell you it was perfect Irish moss.  When Michelle got back from school we finally got around to playing with it again and made some raw desserts.

On the road again

Hey luvs

How was your Thursday? We had a pretty good day here full of good eats and shopping!!! I must admit Orlando has some of the best outlet malls ; )

Lori and I are up here in Orlando again staying at the older sis’s place as part one of our road trip back to NC.

Breakfast was a lovely simply spirulina maca smoothie. We were not too hungry because we had a late dinner.

During the journey up here we enjoyed our favorite cocktail Kombucha tea. We got this from the local health food store the day before, and stocked up mom with some, she likes them!!

When enjoyed lunch at a restaurant we have been wanting to try every time we come to Orlando, but somehow never manage. So this time we made it a priority.

Cafe 118, yep a raw restaurant in Winter Park, FL. It is a cute little part of town.

The restaurant was a little smaller than I imagined, yet very simple and beautiful! Coming from 105 degrees I had different expectations. The menu was a little limited but still seemed hard to decide what to eat.

Both salads were delicious…simple and light…perfect for what we wanted!

You may be  wondering why two raw girls would both order salads to eat at a well known Raw Restaurant when there were yummy things like Raw Lasagna or Spinach Wrappers? Good question, we both did not want something nut based because it tends to be too heavy for our stomachs plus we were traveling and have been sitting in a car for a few hours.  Plus, we are watching are nut intake, again too hard for us to digest.

But the real reason was because we wanted this

We are huge dessert girls, especially raw desserts, so we looked at those first ; ) then decided salad sounded perfect.

I could not believe how “real” the mousse tasted, it almost made Lori and I question if it had dairy?? It was so light and airy. Tasted like the chocolate mousse our grandmother used to make for us as kids.

Overall experience with our first time to Cafe 118 was hit. We both felt great after the meal and it is not too often that we get to go out to eat and order whatever we want on the menu!  I sure miss that from being at 105 degrees.

We spent the rest of the day shopping buying some near workout attire for training in the colder weather for our marathon. Yes we have not forgotten we have a race soon. Our training has been going okay, not great,  we did manage to get a quick 3 mile run in tonight. Plan to get back into the groove of things this weekend.

Our plans for the rest of the evening is cleaning the sis’s is place for when she gets back…there are a few surprises!

Unexpected life’s pleasures

How was your Tuesday, well ours was pretty good : ) It was full of more of this

Want to know a little secret…we want to be a Cullen : )

We took our mom to see New Moon, yes she is a fan too, although not as die hard as we are, but that is okay. She enjoyed it!! And we both really enjoyed the movie more the second time around. We were really able to relax and take it all in – all the emotion that we loved from the book. 

Have you seen it? What are your thoughts? Does it take you once or more than once to really enjoy a movie – to pick up things or just because it was good to see over and over? I feel there are only a handful of movies I would see over and over.

We did not get a workout in today, our time was limited due to family obligations. We had to say good bye to one grandpa this morning as we took him to the airport. And then we are unexpectedly were back in the kitchen making some raw goodies for the older sis to enjoy due to her unexpected trip. Darn, haha, we just hate  creating goodies ; )

Before I share what we ate today I want to show you our family dinner from last night. Remember I mentioned yesterday about making raw tostadas for the family

They were all surprised that it actually tasted pretty good. Dad said, “not bad”. Mom said, “Good, just have to get used to the texture” She does not like avocados. I know devastating….but we were just pleased with their efforts. Although tonight we let them enjoy what they want. It is a work in progress.

Yes a very tall, skinny tree lightly flocked – Perfect! Tonight we put up the outside lights, so it is slowly starting to look a lot like Christmas here : )

Okay now onto our eats…

Some things we made today for us to enjoy were 2 green smoothies, key lime avocado pudding (we are upping our fat intake as an experiment, we will report why soon), chocolate truffles, macaroons, and

Looks like our trip might be coming to end earlier than expected, so we will spend the rest of our time home cleaning our mess we made in the kitchen and the packing.  And we hope to get a long run in tomorrow morning before hitting the road. Yummy chocolate cream cake recipe

Hey everyone

How is everyone’s Sunday going?

Ours started with some fresh grapefruit juice mixed with some coconut water and spirulina and stevia. I know it may sound weird but it was actually really good.

Later we enjoyed our green smoothie before we went for our run today.

Filled with mint, parsley, ginger, water, chia seeds, and papaya drizzled with yacon syrup

Well we are finally starting to get our workout groove back. It turned out to be a beautiful day here in south Florida so we took advantage of getting our Vitamin D :)

Twins Workout:

  • 4 mile run outside
  • push-ups
  • abs

Both felt great, so happy to get a good workout in finally!

So as promised we are going to share one our favorite raw desserts.

Raw Cheesecakes or as we call it Cream Cakes

This recipe might sound daunting, but it is so easy and delicious.

Ingredients:

Crust

1 cup pecans, unsoaked  

1/3 cup, medjool dates (pitted), roughly chopped

1 cups coconut flakes

1/2 tsp sea salt

1 tsp vanilla

Directions:

Place all ingredients into food processor.

Pulse till combined, it will be light and fluffy.

Press into bottom of pan. We used a 8in spring board pan.

First line bottom of pan with parchment or wax paper

Filling

1 1/2 cup cashew butter

1/2 cup coconut oil

1/2 cup agave

1/2 cup water

pinch sea salt (optional)

1 tbsp vanilla

3/4 cup cacao powder (raw chocolate powder)

Directions:

Place cashew butter, agave, water, sea salt and vanilla to blender. Blend till smooth.

Add in the coconut oil and blend.

Then end with cacao powder.

Blend till combined.

Pour into pan on top of crust, we sprinkled some cacao nibs (optional), you may use chocolate chips if you want.

Then place in freezer…that is it. No baking required. : )

Pull from freezer and let come to room temperature for about 20-30 minutes.

Keep remaining slices, if any, in the freezer!!

Verdict:

Everyone loved it!!!!

Loved that it was not too sweet.

Texture was perfect.

Flavor yummy.

Easy on the tummy to digest.

Full of antioxidants and vitamins (gotta love chocolate)

One of the healthiest cheesecakes you could ever have!!! See you can still eat healthy and enjoy desserts too with no guilt!! :)

20 Reasons to be Vegan

Good evening friends,

Tonight we were going to share another favorite holiday meal of ours:Stuffing. Though that is going to have to wait till tomorrow. ;)

Because in honor of Vegan Week hosted by Katy and Michelle we wanted to share with you all some great reasons to consider being vegan and why we are vegans!

Why the Twins Went Vegan

This question to us now is a very easy one to answer…. Basically to us why not?

I mean there are so many great reasons to eat more of a vegan based lifestyle. Notice how I did not use the word diet- we hate that word and for us it is not a diet but a lifestyle change. And one that we are so happy to be living.

But first Lori and I did not go vegan for the protection of animals or saving the environment. We changed our eating habits due to health reasons at first although now it has turned into more of protecting the animals as well as our environment but most importantly changing who we are! It was a slow change for us… we did not become vegans overnight! We grew up with meat and seafood… but as we got older and really started caring for our bodies and wanting to be healthier … that is when everything changed. As many of you know we suffer from food allergies and that is what started it all. We tried everything to help make us feel better and nothing worked till we started eliminating certain foods.

Here is a very quick overview of how we became vegans:

First we cut out dairy, peanuts, eggs and slowly cut back on our chicken intake. Ok started feeling a little bit better but still not quite satisfied. Next we took out chicken completely and only had fish and soy based products. Body still not happy!

Umm, ok now what we thought?

What about gluten/wheat? Ok, that’s give that a try.

Now we were eating no dairy (except for the occasional goat cheese – my own downfall… luckily Lori never really like cheese), peanuts, eggs, chicken, wheat and gluten.

Fixed yet? Nope!

Ok let’s review our food choices and see if we feel better with taking more things out and eating more plant based foods!

Where are we today?

We eventually cut out all dairy including goat cheese, peanuts, all meat, eggs, gluten, wheat, soy, yeast and corn and watch our sugars !

Gosh you may be thinking what’s left???? Good question!

Answer: So many things … the choices are endless. And we are finally happy with the results we are seeing in our bodies. Yes, we not perfect yet. Though I am not sure who is exactly perfect! We just do our best and listen to our bodies.

As you can see we cut out all animal products for health issues. But now we love our planet based lifestyle. Though we still don’t like putting the label VEGAN on us because we still have bee pollen… which to some vegans is still an animal product.

Then why do we eat bee pollen if not consider vegan?

Well we notice our bodies really like bee pollen and it is a great for energy and protein source. And to us that is all that matters.   As I mentioned before we area not perfect, nor do we always strive to be, we just do want feels right at the time for our bodies.

Lori and I feel if you find something that works for your body and you are ok with it… than that is fine. As many other health bloggers out there have said before and we too have said it before: EVERYONE BODIES IS DIFFERENT. DIFFERENT PEOPLE NEED DIFFERENT THINGS. The challenge is though to start listening to your bodies and find out what makes you happy from the inside out!!!

So to conclude, we are high raw vegans who are still learning what food and life are all about. We hope you find out what works for you and be happy with it… and I mean truly happy with it.

Some think vegans eat only carrots and celery, or as my dad would say seeds and twigs : )

Living a vegan lifestyle being restrictive? I do not think so!

See we told you the choices are endless you just have to be creative and have an open mind to try something NEW!! Vegan foods can be fun and full of flavor!

What some more reasons to consider going more vegan? Here is a little list we put together!

  1. Live longer than non-vegans
  2. Less chance of getting heart disease
  3. Help save our environment
  4. Less energy is being used to grow your food
  5. Eating less processed foods (more fruits and veggies)
  6. Create less waste (less material and ingredient waste) aka. Packaged goods
  7. Smile more
  8. Laugh more
  9. Feel great
  10. Look great
  11. Are great
  12. Going against the norm (who likes being like everyone else) ;)
  13. Being different is cool (standing up for what you believe is awesome)
  14. Celebrities do it
  15. Get to eat all raw cookie dough you want
  16. Your parents will be proud because of ALL the vegetables you are eating
  17. Less likely to get salmonella
  18. No worries about cholesterol
  19. No animals were killed for your food intake
  20. Your body will thank you

Now we are not asking everyone to be 100% vegan (though that would be awesome). We just ask if you think twice about the food you eat and what it is doing to your body and environment. And maybe try to incorporate some vegan meals into your lifestyle!

Our raw sauerkraut is done fermenting. We let this batch go for 3 weeks.

Our twisted pumpkin pie recipe

We called this a twisted pumpkin pie because we followed Averie’s base and idea but put our own twist on it :)

I must say creating all these delicious desserts was so much fun we plan to do another dessert week again soon :) We have so many more ideas that we want to share… we get so excited about creating new raw food recipes… :) We are dorks!

Pure2Raw Recipe: Twisted Pumpkin Pie

Crust/Crumb topping Ingredients:

1/2 cup almond meal

2 dates, pitted

Throw the whole 2 ingredients into a blender and blend till crumbly.

**now our goal with this crust was to create more crumb texture therefore we did not add any agave or more dates. If we did that it would have turned out more like a crust ( real sticky and holding together well)

Here is what our crumb topping looked like

 nov pure2raw pics 428 See our crumb is just barely holding together… more like a little crumb texture. Set topping in a bowl while you make the filling.

Pumpkin Pie Filling

Ingredients:

  • 1 cup pumpkin puree (fresh pumpkin – the more raw route or canned – whatever you have or prefer)
  • 2 dates, pitted
  • 2 tbsp irish moss **optional – we added this because it really helps lighten recipes
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • pinch ginger
  • pinch nutmeg
  • 4 tbsp water

Directions:

Place all ingredients into a blender

Here is what irish moss looks like when you are done soaking it and than pureeing it up

Puree all ingredients till fully combined (it takes a little bit due to the dates)

AND THAT IS IT!!! EASY as 1-2-3!!

Now time to plate up and enjoy. We put ours in ramekins for more individual servings.

Now we topped ours with some of our raw whip cream from the other day!! This is optional you can just put the crumb topping on.

YUMMY!!! We ate this in about a whole 2 seconds… :)

Thanks again Averie for the inspiration and easy recipe to follow. We plan on remaking this for our family during the holidays.

Twins Twisted Pumpkin Pie

Theme week: Dessert

Hey loves,

How was everyone’s Saturday? Good I hope, despite the nasty weather here our has been alright. Thank you all for the nice comments about our SMORES! We look forward in seeing your smore creations : )

We managed to get in bed at midnight last night : ) Then we got up at 5am to get things ready for the market.  This is sleeping in for us because now the market starts at 9am instead of 7am!!

~off topic real quick, I wanted to share a funny story. I twittered about it when it happened, but just had to share it again. It is too funny not to share…Well as you all know we make raw green flat breads so I had a variety on my table. This random guy (now I mean random) come up to my table and started looking at the breads. And then he asked me, “Oh what is Swiss Chard? Is it some type of fancy cheese?”

I did my best not to laugh, but I nicely explained that swiss chard is a green leafy vegetable. Please keep in mind that these breads are green….

IMG_1288I am not sure how he associated a green bread with cheese especially it coming from a vegan company?? I told Lori this story and saddens us that most people do not even know what a green leafy vegetable is, let alone a vegetable in general. Is this what our society has come to?? : (

Okay back on topic..

Before heading out we finished off our raw yogurt and we topped it with fresh raspberries : )  We are so in love with our yogurt, we get so sad when it is gone : (

Our lunch was a mix of kale chips, raw brownie bites, raw cheez crackers, and a gluten free vegan chocolate crumb cupcake….oh and plus a green smoothie.  What a unique lunch, huh? Well that is our Saturday we eat whatever we can get our hands on (we are too tired from the market to fix anything fancy).

Although tonight we are creating another classic dessert, and it is perfect for this time of year.

This recipes is inspired from our friend Averie. She did a post recently where she shared not 1 but 2 recipes of pumpkin pie….and ever since we saw it we have been waiting pumpkin pie. So here is our version from the very talent Averie!
