How was everyone’s weekend? Glorious I hope
Well Michelle and I had a busy weekend though we did manage to relax a little last night.
As we mentioned earlier this week we wanted to share our grasshopper pie with you all. The one that we got to enjoy on our birthday!

Are you ready?
If you love mint and something not too sweet than you will love this mint pie!
Pure2Raw Recipe: Raw Grasshopper Pie
Ingredients:
Crust-
- 1/4 cup carob powder (or you can use cocoa powder)
- 1/2 cup coconut flakes (or you can use any nut meal you like)
- 1 tbsp alcohol free vanilla
- 2 tbsp date paste (or you can use any liquid sweetener you like)
Directions:
Place all ingredients into a food processor or blender and pulse till combined. *If you already have coconut flour or nut meal please feel free to hand stir this all together
Press crust dough in a 6 inch cake pan or springform pan would work too.
Filling:
Mint Layer-
- 2 large avocados
- 2 tbsp sunflower lecithin (or soy lecithin, xanthan gum,or guar gum of your choice though the amount for the recipe may vary depending on what you use, I would suggest starting with 1 tsp)
- 2 tbsp irish moss paste (this is optional but it provides this layer with great texture) * you may use gelatin if you prefer
- 1 tbsp alcohol free vanilla
- 2 tsp mint extract (you may add more or less depending on how minty you like your pie to be)
White Creme layer-
- 1 banana
- 1/4 cup lucuma powder (for more substitutions check out here)
- 5 packets of stevia
- Few drops of liquid chorophyll (to help with green color)
- 1/8-1/4 tsp spirulina (additional nutrition value and helps with color too)
- 2 tbsp water
Directions:
For both layers place your ingredients into a blender and blend till smooth (may use a food processor if you do not have a blender).
Putting the whole pie together!

Assembly:
- Take your pan that is already filled with crust and spoon a little of the white creme layer down. Place in freezer to set about 15-20 minutes.
- Remove from freezer and place the mint layer on top of white creme layer. Place back into freezer to set about 30 –45 minutes.
- And for the last layer top the remaining white creme layer on top of mint layer. And decorate with cacao nibs if you would like.
- Place the whole grasshopper pie back into the freezer to let set.
When ready to eat the grasshopper pie take out of freezer about 20-30 minutes to let thaw a little. Or may eat pie cold

Hey friends,
We are happy to see that everyone likes the green smoothies to-go cups! We have been using ours all the time now! We still love our mason jars, but when we are on the go this our perfect. : )
We have been enjoying a lot of yummy salads this past week.
Local spinach salad with shredded beets, sauerkraut, and hemp seed dressing.
One of our favorites, a mix of local greens, sauerkraut, and avocado and lime dressing.
Another mix of local greeens including dandelion leaves with a few herb crackers and an avocado curry dressing.

Heavenly! We seriously love our salads!
A Thai sea spaghetti vegetable salad, this one was so good! Loved all the different textures…and of course we topped it off with sauerkraut!

Hello friends,
Happy Monday to you all!!!
We hope everyone had a fantastic weekend.
We started our Saturday morning with fresh fruit before our farmers market. Michelle and I keep going back and forth on what to have to eat before the market. We sell at two different markets on Saturdays and away from home for over 7 hours. Therefore eating something at 4am in the morning is tough because we really do not feel like eating that early in the morning, though we have to eat something because we do not eat till at least 8 hours later! Tough decisions! In addition we do have access to run to the bathroom so we can not drink any water!!!
Anyways we ate a big bowl of grapefruit and granny smith apples which was fine though our tummies did hurt at the market (we think it was too much fiber for that early in the morning).
We are evaluating what would be best for a good breakfast before our markets. Any suggestions?!?! What would you consider is a great breakfast?
When we got back home we just snacked on some things and had a green smoothie from a local juice bar that recently opened up! It was delicious.
It is a local juice and smoothie bar that opened up a few months ago. It is right up the street from where we sell at on Saturdays in Carrboro!
The owner is awesome and so sweet! If you are in the local area you should go check it out!We might even doing some raw cooking demos and events with her!
We got a spinach, cucumber, mint, kale, apple, ginger, cinnamon smoothie.
We did not end up working out on Saturday- we are so tired and worn out that we barley have energy to do anything. We did manage to get more things ready for online orders! Than we took the rest of Saturday off from work. We needed some down time!!!
For dinner we put together a delicious green salad all made from local greens from our great farmers. We are so fortunate to have such great farmers in our local area that provide amazing produce.

Sunday was our normal day of getting things ready for our week ahead. I leave soon for Paris!!!!! It is hard to believe that my trip overseas has come already! I do plan on talking about my experience overseas. So expect some interesting posts while I am there
I am a little nervous about what I am going to be eating! Not sure if I will be able to really eat what I eat here while I am over there

Other news:
We made some changes to our online store here on our blog. We just kept our t-shirts and some of our raw foods. If you want more of our product offering please remember to visit our online bakery – twin cakes bakery. We will be adding more products on twin cakes bakery site soon. Currently we have our raw foods, dry mixes for our Twin Cakes goodies as well as the very first raw food dry mixes. We are the FIRST ever to offer raw foods dry mixes for our crackers. We plan on adding more soon! Stay tuned. One great thing about the dry mixes is that you can make the whole batch of crackers yourself (not just the few ounces we offer but the whole tray therefore hopefully making it more affordable for many). If you do not have a dehydrator that is fine, you can use your oven and just set it at the lowest setting it can go.

When Michelle and Lori asked me to write a guest post on their blog I was thrilled (and of course honored), but what was I to write about…?
Well, I’m going to let all of you in on a little secret… This blog you are reading from right now, Pure2Raw, was the reason I started blogging. True statement.
I love researching. I research places to travel. I research new exercises. I research nutrition. And, being mostly raw and vegan-ish, I researched raw foods. Google is a wonderful place my friends. All this research led me to Michelle and Lori’s blog. I was instantly hooked, and loved reading about their workouts, their meals, and, oh, the recipes they post! Needless to say, yes, I started blogging because of those twins.
So, in keeping with the Pure2Raw spirit, I have decided to embark on a recipe no blogger has done before (well none that I know of)…
Raw Vegan Truffle-filled Macaroons, or as I like to call it, because it’s so much fun to say, Truffaroons!

The Raw Vegan Truffaroon
recipe follows:
Truffles
- 4soft dates
- 1/8 cup dried cherries1/2 tsp vanilla extract
- 1/8 tsp cayenne pepper
- 1/8 tsp salt
- 2 tbsp cacao nibs
- 4 tbsp cacao powder
- dash of coconut water, or alternative liquid

Process all in a food processor until the cherries are processed but try to keep the “batter” chunky.

As non-messy as possible, not an easy task, form the truffle mix into little balls.

As you can see, mine are beautifully uniform…
Place the truffles into the freezer while you make the macaroons.
Macaroons
- 1 cup unsweetened dried coconut
- 1/2 cup coconut flour (or almond flour)
- 1/4 cup coconut butter (melted)
- 2 tbsp coconut oil (melted)
- 1/4 cup maple syrup
- 1/4 cup agave
- 1/2 tsp vanilla extract
- 1 tsp cinnamon
- pinch of sea salt

Mix all the ingredients together until they stick and are able to form a ball.
Now the skills are called forth! Form a handful of macaroon batter into a flat(ish) shape in your palm to make a bottom for the truffle to sit. Place a truffle into this and cover with more macaroon batter. Form, as well as you can, into balls. I dehydrated mine for about an hour or so, just for fun, but you can eat as-is or chill until ready to devour.

With any leftover macaroon batter, form into balls, and roll in raw cacao powder or cinnamon.
And just as a warning, these babies are BIG. I may have made my truffles a bit too large but hey, life is short, chocolate is good…

And I highly suggest to try out this version:
The Raw Vegan Spiced Truffaroon
Ingredients:
Same as above but add cayenne pepper, dried chili pepper powder, and cinnamon to the truffles or macaroons, or both like I did! I think the spice is a must.

Why a Truffaroon…? How did Lori (not the twin) come up with this crazy idea? It wasn’t easy. (Well, it was easy, but that’s beside the point) I wanted to bring together some of the amazing looking (and tasting! I’ve tried them) recipes that Lori (the twin) and Michelle always write about. My favorite recipe, the Candy Cane Macaroon, was definitely in my mind for the recipe but I thought I’d add some spice to the cold days.
You girls are awesome! Keep up the great work and definitely keep posting your recipes!
And, in closing of my guest post, a question….
What is your spice in life? Better yet, which spice are you?
Personally, I’d like to be Cayenne. It’s a little spicy, and goes with the sweets and the savory’s.
Or Turmeric because it’s mellow yellow (and turns things orange. Like a magic marker. Random, I know).
And my spice in life is exercise. No matter what, it makes me feel amazing and powerful.

Hey friends
Hope you all our having a wonderful Saturday. Our Saturday started off with a wonderful 3 mile run with the lovely Brittany and the rest of the amazing gals at FitBloggin.

We ran alongside the harbor. It was beautiful…just as the sun was coming up!

We quickly showered and ate a Vega Shake, of course! And headed downstairs for Fitbloggin to finally officially begin

Everyone else enjoyed a wonderful breakfast sponsored by Quaker, but since we cannot eat oats, Vega was the perfect replacement!

I attended 2 sessions in the morning:
Blogs, accessibility, and SEO, which was great, but also left there a little confused. I still not sure if I understand how to maximize SEO that well, but did learn how important it is to make your blog accessibility.
Next I attended the How to Pitch to the Traditional Media. I enjoyed this. Lori and I have been on the local TV station before, and have done a few interviews for local papers and magazines. It was cool to hear how media personnel look at “news” worthy to write or video about.
Next up was lunch, which for us allergy suffers also causes a problem. Lucky for us Whole Foods was not too far away
from the event.

Now on to the afternoon sessions…so far we have been having a great time and meeting some great bloggers’! Trying hard to remember people’s name, their twitter names, and blogs….and I am not good with names, so I apologize now if I forget your name ; )
First afternoon session Lori attended was Beyond the Blog:Getting Published. It was a great and very informative session. Thanks to all the bloggers’ who spoke and shared their publishing stories. The presentation was about how bloggers can get a book deal!
I attended Body Image and Blogging session featuring MizFit. Again another great presentation!!!

One that really got me thinking about a lot of different topics surrounding food, fitness, comparisons, body image, and self-acceptance. Which I realized I am me, and this is the best I can do for me and I hope people do not judge me.
Than it was our snack table.

Wish we could have brought more, but we are a small business with a small budget.

Than time for more sessions. I attended the Making Money From Your Blog!
Other bloggers did take some great notes from the sessions (presentations) and speakers like Whit and Katy.

Hey everyone
How was everyone’s weekend?? We had a long one over here, but worth it ; ) Did anyone watch the Oscars?? We took the night off from work and enjoyed some wine and good entertainment. We just enjoy the awards shows…all the pretty dresses.
We enjoyed some good eats over the weekend…featuring some new recipes (which we will share ; ) )
Enjoyed a very large breakfast Saturday morning before we headed to the farmers market.
Buckwheat apple porridge. We have not had this in sooo long, it used to be our breakfast every Saturday morning last year before our Saturday markets. It is so simple and very filling, which is what we need for our long market days.

Sunday morning we finally made some raw pancakes in honor of Heather’s Pancake Sundays.
These were not our best ones, it is pretty much just mashed up bananas. But we will share the recipe if you all want.
Yesterday we did our longest run yet since the marathon in January. Honestly we really have only ran 3 other times since the race, we just have not been wanting to run. We have been enjoying other forms of exercise.
Our goal was a 30 minute run, but it turned into a 9o minute run. We went up to the local park and got on a trail and did not know how long it was….but that is okay it was 60 degrees out and sunny!! We will take it!!
Pre-workout snack:

We have been testing out new workout snacks for our cookbook, yep having a whole chapter dedicated to what we eat for fuel and recovery ; )
And then dinner and dessert were both new recipes!!
Dinner:

Fermented Kelp Noodles
With a side of kraut sprinkled with dulse
Perfect Sunday dinner!! We think kelp noodles will become a regular Sunday dinner ; )
And dessert took 2 trials. We have been wanting to make raw carrot cake since forever!! There are tons of recipes out there, so we of course wanted to create our own. We wanted to make it out of carrot pulp, so the first attempt failed….ended up in the trash compost. Second was beyond perfect….way better than we were planning, it honestly tasted like real carrot cake!!!!
Can you tell the difference?

Not only was it raw but free of gluten, eggs, dairy, peanuts, corn, soy, and NUTS!!!
We had seconds…it was that good. I think I could eat this every night. It was beyond words!! I know you all are thinking, do we plan to share the recipe….YES!!! We will expose this tasty easy to make dessert sometime this week ; )
Not a bad way to end the weekend.

We bought this the other day at the store because our older sister loves it, so we had to try for ourself.
Verdict?
Different. It was very sweet compared to other coconut water, even though it claims to be unsweetened.
Maybe it is their types of coconuts? Or maybe it was due to being chilled and out of can? Who knows but it was bothering me that it was so sweet, a mental thing I guess. But we drank it all. Not sure if I would purchase it again. Just maybe when I need something cold to drink. Lori did not mind it too much, enjoyed having something different.

Hey everyone
How is your Friday?? So glad everyone enjoyed our story about us becoming bakers and creating Twin Cakes Bakery. In cased you missed them you read them here, Part 1 and Part 2.

We have been extremely busy here…non-stop in the kitchen getting all our Twin Cakes Valentine’s Day Orders in.
We even didn’t get to eat till after 1. Just been snacking on this and that in the morning…a random day of eats for us. But the weird thing is that we have been feeling good. By not eating too much in the morning has actually given us more energy…which sometimes is hard for us because we were raised you have to eat breakfast.
Well this maybe true but we are starting to realize for us not having a huge breakfast has been nice for our energy levels. It is hard not to eat right away in the morning, but as long as we are busy we do not even think about eating, sort of ; )
Do you have mornings were you do not eat much? How do you feel? What are your thoughts on eating breakfast or no breakfast?
Now do not get us wrong, we do eat something, just not a full blow meal! And this past week we have not been eating till around 10 am. We are playing around with our morning eats, which means we have been having later workouts. We will keep you posted, but in the mean time check out Gena’s great tips for breakfast. I could go for some of those green eggs!!!
Anyways here are some food we have been eating these past few days

Hey luvs
Our friend Lori had asked us to share our story about Twin Cakes Bakery. So grab yourself a something good to eat or drink here we go with your story. We hope you enjoy…
Background:
First, here is a little background on who are the twins. We were born and raised in Fort Myers, FL. We have two older sisters; we have Italian/German in our blood so food was a main topic in our family. We were definitely that family who continual looked forward to our next meals!
Don’t you just love my little grin and how Lori is not looking at the camera?? Love our brown paper lunch bags??
From a very young age were taught to make our own food mainly due to having 4 girls in the house we all wanted something different.
And now we are all grown-up : (

Lori and I really had some unique food habits. We ate completely different things while growing up. Lori wanted everything plain and I wanted everything with either cheese or mayo (which Lori hated both). Our mom was smart, a great way to avoid many fights she made us start packing our own lunches. This was the beginning for us girls to fall in love with cooking.
When did we start baking:
Although our baking really did not start till we were in high school. Our second oldest sis, Jen, was the one that taught us to bake. She loved it and still does, but due to severe food allergies she no long gets in the kitchen as much. She would create some delicious things for us to enjoy…our favorite mint chocolate chip cookie sandwiches, cinnamon buns, her famous sour cream coffee cake, and much more. As she went off to college, we started playing in the kitchen. And realized we loved baking!
Our grandma’s side of the family were German bread bakers, so I guess you could say baking runs in our family. It is in our blood to make things for others. All throughout college we would bake for our teachers, family members and friends. Everyone loved it!! And so did we! We got more joy for baking for others than ourselves.

How did you know you were going to have your own company?
We both majored in business during college. During college we worked for an entrepreneur so we got to see what was involved in starting a company from scratch. We knew we would have our own company one day just not sure what that would be nor when. After college we went home for a year to figure out what we wanted to do with our life…like most college grads due, right??
What happened next?
Well to make a long story short Lori moved to Richmond, VA as Michelle moved to Denver, CO. Both of us felt we needed to finally spilt up after 23 years of being together! Well as we both worked for other companies we started realizing what we were doing was not making us happy! So the massive research began and our dream started to be come real on paper. After many hours of talking on the phone, emails, and texting we knew it was going to be an online bakery. We wanted it to be a different type of bakery but still was not sure exactly what that would be. We had so many crazy ideas running around in our heads.
How do you realize you had food allergies?
We started to experiment with alternative foods and diets. We tried all different types of cleanses, food combinations, etc. because all during college we suffered from stomach issues. This is a health problem that our whole family suffers from but we did not really know why we were always feeling so bad all the time. We thought we were eating healthy. Nothing really worked.
Then our health started deteriorating and we started eliminating things out of our diet. We realized our bodies did not like gluten, wheat, peanuts, and dairy. For us we were never upset that we could not enjoy certain foods. We were actually excited to finally start feeling better and actually eating this way helped make us eat healthier. And we slowly starting cutting back on our meat intake. We were never really big red meat eaters though we did like our chicken and fish. But after years of still not feeling better we decided to try anything that help and if that meant no meat, etc. then so be it.
What changed?
We got more relief once we stop eating meat though we still were not 100% better. This lead us to even more confusion and determination to figure our health out.
Another year past and we both ended up in Raleigh, NC. Still working for other people, ugh. We kept working on the side as we also figured out what our bodies liked to eat and not eat. We then started creating meals that were safe for us and realized we wanted to help others that had limited diets.
Overtime and more research, our business plan changed (we wrote two different business plans, which is a must if you are thinking of opening a business). We decided to start as personal chefs and put our online bakery on hold.
How did we chose this career?
People reminded us since we love to bake and cook why don’t we do it for a living. It was like light bulb going off in our heads. So then came about Twins Kitchen Personal Chef Service, yep we both got certified through United States Personal Chef Association. And our first few months of business was a test. We both did not have good sales skills and had to learn to go out and sell ourselves. You must learn to grow thick skin! We gained some clients but realized there was still something missing. We were not having as much fun as we had thought having your own business would be.
Let me tell you starting up a company is not as easy as it may sound…unless you have tons and tons of money saved up. Now we had some savings, but still nothing to prepare us for what we thought. It takes a lot of work, many long hours and lots of sacrifices.
What happened next?
Baking!
That was the missing link. Sure we still enjoy cooking but baking was what we really enjoyed and could do it all day long. So we signed ourselves up for farmers markets, and that is when everything changed.

You will notice 3 product categories. Our RAW flatbreads, crackers, and snack bites. Orders right now are shipped via UPS.
These are some of our products, we will be adding more over the next few days. This is new to us, so please bare with us. There might be some bumps along the way, but we are soooo excited to offer our products to you all ; )
But we hope you all enjoy our goodies as much as we do, and some of our other fellow blogger friends Stephanie, Heather, Lori, Gina, Gena, Liz, and Katie.
Glad to you see you all liked the veggie mash Lori enjoyed earlier this week and we plan to re-create it tonight for dinner. Yes warm pureed veggies is perfect on a cold, snowy night : )
AND…
Well as we have previously mentioned we are going to be AUNTS!!!
We got a text from our older sis this morning and we found out she is having a BABY GIRL!!!! Another girl added to our family ; ) Sorry dad! Yep, Lori and I have 2 older sisters, plus our mom, so five girls! YIKES!! Now another little one is being added : ) We are so happy for our sister and her husband.
And we have briefly talked about her diet on here, and she is not 100% raw nor 100% vegan, although she most of the time her food choices are vegan. For those of you who have asked as about being pregnant and raw/vegan please check out the amazing Kristen who is a great example and is going through the great journey of motherhood. Plus there are many other great raw moms out there….Debbie, Lori, and check out this great list of super moms ; )
